He serves as president of CR3connect, overseeing projects at the Iowa strategic advocacy and lobby firm. Outside of work, Craig Schoenfeld enjoys cooking and making Italian and specialty cheesecakes. One of the most popular desserts enjoyed around the globe, the cheesecake was first invented in Greece on the island of Samos. Anthropologists have discovered the molds used for creating cheesecake in their excavations and can date them back to 2000 B.C. The original Greek recipe for cheesecake was comprised of only four key ingredients: wheat, flour, honey, and cheese. These cakes were cooked in wood-fired ovens and typically served at Greek weddings. After the Romans conquered Greece in 146 B.C., they adapted the cheesecake recipe to include eggs and pastry shells. Eventually, cheesecake became popular throughout Europe, and the recipe for the dessert was first published in an English cookbook in 1545 upon the request of Henry VIII. When cheesecake’s popularity reached America centuries later, the recipe for the cake was again modified. By 1873, cream cheese was incorporated into the recipe to create a thicker texture. This new version of the cake was given the name New York Style cheesecake. Today, various cultures around the world make their own unique version of cheesecake using a range of ingredients.
