Introduction
Urban Bricks Pizza is a relatively new food chain in the Stephen F. Austin university student
center. They are famously known for allowing customers to create their own pizza with all the
ingredients and makings of the pizza right in front of their customer like it would be in a local
Subway restaurant. The customer can then choose their own ingredients making a special pizza
created in their favor. While most other pizza chains serve already made pizza Urban Bricks
Pizza’s renovated and new approach should attract more customers. Our goal is to find out what
the students at Stephen F. Austin State University think about Urban Bricks Pizza and their
unorthodox method of serving pizza.

Hypothesis
The student body at SFA enjoys the revamped Urban Brick Pizza and they feel like it brings
more variety to what is already there.
What is Urban Bricks Pizza?
Urban Bricks Pizza is a relatively new Texas-based franchise that focuses on “Making a better
world, one slice at a time…!” (3). Their philosophy focuses on promoting a healthier lifestyle for
their patrons as well as making food easily accessible and deliverable. With franchises spreading
around the state of Texas they also thrive on supporting their local communities, providing
purpose and development within their organizations and making sure that the customers and
employees are well taken care of.
Who is the owner/manager of the concept at SFA?
The owner of the Urban Bricks Pizza here at Stephen F. Austin State University is Ken Mace. He
is also operator of the Urban Bricks Pizza that will be “coming soon” in Houston, TX. A man by
the name of Sammy is the owner of the actual Urban Bricks brand. Sammy launched the first
Urban Bricks Pizza in San Antonio, TX.

Location & Competition
Urban Bricks Pizza is currently located in four cities: Austin, San Antonio, San Marcos, and
Nacogdoches. In the current cities they are expanding with multiple “coming soon” phrases to
gain the attention of current patrons and raise awareness of the expansion plans that they have in
store. They are currently seeking out various locations in Houston as well. Urban Bricks is
striving to open their franchise at locations that vary from entertainment centers, urban
storefronts, mixed-use projects, upscale shopping, colleges and universities, university adjacent
shopping centers, and malls.
The Urban Bricks Pizza at SFA is located on campus in the Baker Patillo Student Center. Their
competition on campus include: Chick-Fil-A, Panda Express, Which Wich, Zoca, Sushic, Marble
Slab Creamery and Great American Cookie Company. Not only do they have to compete with
these food chains, they also have to compete with various food chains off campus such as
McDonald’s, Taco Bell, Raising Cane’s, and many more. With these various food
establishments, the SFASU student body has multiple options to choose from. Urban Bricks
Pizza contains a competitive on-campus advantage because they are the only establishment that
serves both pizzas and salads. Not only that, but Urban Bricks Pizza also delivers as well. The
hours of operation for the current dining establishments vary in closing time between the hours
of five o’clock and nine o’clock. With this being the case Urban Bricks Pizza contained an
advantage over four competing food vendors because of their closing time which is eight
o’clock.
How does the ordering process work? When you go through the concept, how do you
order? Do you fill out a sheet, how does it work?

When you approach the counter at Urban Bricks Pizza, you are greeted by the workers. They
then proceed to ask you what type of pizza you would like; whether it be a preset pizza or a
build-your-own pizza. If you select a preset pizza, you will then be sent to the end of the counter
where you can pay for your order. If you decide to build your own pizza, they will ask you what
type of dough you prefer for your crust, what sauce you would like, and then proceed to adding
however many toppings you desire. After you have built your own pizza, they will cook it for
you in the brick oven that is visible for the consumer to see. They will lastly ask if there are any
type of sauce drizzles that you may prefer on top of the pizza once it is cooked. That is when you
proceed to the end of the counter to pay for your order. If you select a salad, you will go through
the same process as you would if you were building your own pizza. This ordering process is
similar to Subway’s ordering process in which it is “easy to follow as employees walk customers
through the making of their sandwich, ingredient-by-ingredient.” (10).
How can you pay? Dining Dollars, cash, credit, etc.
Urban Bricks Pizza accepts all forms of payment including SFA Dining Dollars, credit/debit
cards, and cash.
What are the hours of operation and how do they compare to off campus pizza
establishments?
Urban Bricks Pizza is open Monday-Friday from 10:30 a.m. -8 p.m. and Saturday-Sunday from
12:00 p.m. -8:00 p.m. The three main pizza establishments neighboring one another within the
Nacogdoches area are Pizza Hut, Dominoes and Hungry Howies. All three of the franchises
nightly closing hours ranges from 11:00 p.m. to midnight (6). If SFASU students, both on and
off campus, were craving a pizza after 8 o’clock then Urban Bricks would be missing out on

potential sales. All actual financial numbers would not be known unless financial information
was given to calculate. “Restaurants need to shoulder more expenses to keep the lights on
longer—but the crowds usually aren't that big at odd hours, and customers don't end up spending
very much.” (7) Seeming as longer hours pay not generally produce more revenue Urban Bricks
is at a slight disadvantage due to the “weekend night rush” when students are feeling lazy and do
not feel like going to physically get food.
How many different toppings and crusts does Urban Bricks offer?
Urban Bricks Pizza offers both “build your own pizza” as well as foundation pizzas. The “build
your own” food franchise has taken off and seen great momentum with no signs of slowing down
or stopping. “Perhaps the best indicator that this trend is not going to decline any time soon is
that fact that many of the traditional fast food restaurants have taken notice by revamping their
menus, offering more premium choices, and upgrading the dining environment.” (8) Urban
Bricks achieved all three of these aspects of a booming franchise and was able to offer the
SFASU students better ingredients as well as toppings and ways to combine them. The
foundation pizzas include eight different types that contain the same ingredients regardless of
which establishment the patron attends. Some of these foundation pizzas include the three little
pigs, buffalo chicken, white mushroom and many more. The patrons also have the ability to add
and take away any ingredients that they want if they choose to slightly personalize their pizzas.
With the “build your own pizza” the patron is able to choose from an array of different crusts,
sauces, cheeses, sauce drizzles and multiple toppings that include both meats and vegetables.
Urban Bricks Pizza also carries salads that include a Greek, Caesar, and Almond Banana with
the option to build your own salad as well. With having many options to choose from including

the “build your own pizza” and personalized salads, it ties into the Urban Brick philosophy to
promote healthier living which is always an amazing idea to have on a college campus.
Do they offer any healthier ingredient options for students?
As stated in their philosophy one of the main priorities of Urban Bricks Pizza is to promote a
healthier living while making healthier food which is a major advantage that they contain.
Compared to other companies Urban Bricks stands out because of the reach available towards
the vegan and vegetarian community. Some of Urban Bricks competition that provide a healthy
alternative including both Chipotle and Subway which have the same process of handling the
order for the consumers, have no problem with displaying their ingredients online for the
consumers to see. Subway does voluntarily provide the information to protect themselves against
any lawsuits and to legitimately inform the consumer on what they are eating. Both
establishments have their nutritional information readily available online for any curious and
health conscious consumer to view (4). Consumers are more likely to respond better when they
are able to get their questions answered. In regards to a fellow pizza establishment in the
Nacogdoches area that delivers and appears to have a good choice of healthy ingredient options
does not display their ingredients on any forum (5). With Papa John’s maintaining their
ingredients as a “secret” it seems as if they may or may not have something to hide which would
not go well with the consumer. Luckily Urban Bricks has any nutritional information available
for the consumer to enjoy which is good in the health conscious society we live in today.
Vegetarian students at SFA can enjoy the large range of vegetarian made toppings for their pizza,
making it easy to create many assortments personalized towards their preferences. Urban Bricks
also offers gluten free crust for students avoiding gluten in their diet.

Does having the Urban Bricks Pizza establishment on campus differ from having it in an
off campus location?
For the 2014-2015 school year “the Residence Life Department provided housing for
approximately 5,000 students living in 16 residence halls on campus” (2). The students need
access to food even if it becomes later in the day and the remaining food establishments have
closed. According to Sam Oches’ article on QSR Magazine, “Millennial and Gen Z customers
are the Holy Grail for quick-serve brands, and college campuses are ground zero for securing
their lifelong loyalty” (1). The Generation Z demographics seems to thrive on fast food and
faster service. New delivery services such as Munchies Food Delivery have been thriving both
on and off campus. They are a food delivery system in which they deliver food from any and
everywhere in the Nacogdoches area. They deliver food from restaurants that do and do not
deliver which is a plus for those students who prefer to enjoy food from places like Wingstop
Chilis and Whatburger. Not only is the business ran by SFASU students but their hours of
operation are Monday-Sunday from 8 a.m. to midnight. The span of time between opening and
closing is in competition with Urban Bricks because of the easy accessibility and social media
presence (9). There are specific developmental tools that assist in establishing whether or not it
will be a profitable business move to open a dining establishment on a college campus. Those
tools assisted with placing a pizza and salad location in an area where there are many other
dining areas so that there may be no repetition or complacency for the student patrons. The
Urban Bricks Pizza also has the opportunity to indulge in the profits of those who do not live on
campus but may need to satisfy their specific hunger need.

Urban Bricks does deliver to on-campus students. Only delivering to places on campus is a big
disadvantage. The new student-run company, Munchies, not only delivers, but they will go out
and get the food “from any restaurant of choice right to your dorm or residence” (12). The
delivery process works by calling in to Urban Bricks, and then placing your order. The phone
number to call to place an order is “(936) 468- PIZA (7492)” (11).
What day did they open on campus? When was the grand opening?
Urban Bricks Pizza made its debut on SFA’s campus on August 31, 2015. The grand opening &
ribbon cutting took place on September 16, 2015.
Conclusion:
Urban Bricks Pizza is a relatively new establishment that follows many of the top food
distributing processes, in regards to the “build-your-own” concept, which has remained a focus
point within the secondary information. Subway and Chipotle are the firms that Urban Bricks
Pizza resembles as far as distribution of pizza within the establishment and freshness of
ingredients. Freshness and variety of ingredients are primary reasons on why Urban Bricks Pizza
has been able to flourish within the upcoming pizza-making industry. If and when there are new
innovations within the “build-your-own” sector of the food industry then Urban Bricks Pizza
should adapt and improve, if necessary.
Needfor Primary Research
In order to find our objective, primary research is needed. There is not enough
information to support our objective. We are hoping to find more information about how the
student body at SFA views the newest addition to the Baker Patillo Student Center. We also want
to see if image of Urban Bricks Pizza varies by age, gender, classification. We also want to find

out what the students like and dislike about Urban Bricks Pizza, but also see if there are things
that need to be improved. We hope to discover enough information that will support our list of
needed primary information. During our research, we want to find if our research supports our
hypothesis and our objective.
Methodology:
Our objective was to gather opinions of Stephen F. Austin State University students,
ranging from freshman to graduate students on their image of Urban Bricks Pizza. To obtain that
information, we created a research questionnaire which had many different types of questions.
Our market research team administered the questionnaire through personal face-to-face surveys
on the campus of Stephen F. Austin State University. We interviewed people throughout the
campus in the Baker Patillo Student Center, the Ralph W. Steen library, the Austin Building, and
outside of the student’s dorms. Although we attempt to interview fifty-one students, our sample
size consisted of forty-five students who actually participated in the survey. We were able to
achieve an eighty-eight percent response rate with a twelve percent rejection rate.
Field Worker A:
Field Worker A administered 3 questionnaires on Monday, November 16th in the Ralph
W. Steen library. The first survey took place at 1:14pm on the third floor of the library, the
second survey took place at 2:01pm on the third floor of the library, and the third survey took
place at 2:11pm at the entrance of the library. Field Worker A administered 1 questionnaire on
November 18th starting at 4:05pm in the East College Cafeteria. Field Worker A administered 11
questionnaires on December 3rd in the library and at Lumberjack Landing. The first survey took
place at 2:17 in the front of the library, the second took place at 2:23 on the second floor of the

library, and the third took place at 2:34 on the third floor of the library. The fourth survey took
place at 3:08pm just outside Lumberjack Landing, the fifth took place at 3:17pm in the front of
Lumberjack Landing, the sixth took place at 3:22pm in the front of Lumberjack Landing, the
seventh took place at 3:30pm inside of Lumberjack Landing on the first floor, and the eighth
took place at 3:45pm inside Lumberjack Landing. Later that night, the ninth survey took place at
8:24pm on the third floor of the library, the tenth took place at 8:30pm on the fourth floor of the
library, and the eleventh took place at 8:38 on the fourth floor of the library. Field Worker A
used random sampling when selecting respondents and had a 71.4% response rate.
Field Worker B:
Field Worker B administered 8 questionnaires on Monday, November 16th in the Baker
Patillo Student Center. The first survey took place at 1:13pm in the Baker Patillo Student Center
by Chick-Fil-A, the second took place at 1:30pm by Chick-Fil-A, the third took place at 1:41pm
by Zoca, the fourth took place at 1:47pm by Panda Express, the fifth took place at 1:52pm by
Which Wich, the sixth took place at 1:57pm by Chick-Fil-A, the seventh took place at 2:04pm by
Chick-Fil-A, and the eighth took place at 2:08pm by Chick-Fil-A. Field Worker B administered
2 questionnaires on Friday, November 20th. The first survey took place at 10:34pm in the Austin
building, and the second took place at 11:00pm in the Baker Patillo Student Center by Chick-Fil-
A. Field Worker B administered 5 questionnaires on Monday, November 23rd in the Baker
Patillo Student Center and the Ralph W. Steen library. The first survey took place at 3:05pm in
the Baker Patillo Student Center by Chick-Fil-A. Later that day, the second survey took place at
7:03pm on the fourth floor of the day, the third took place at 7:09pm on the fourth floor of the
library, the fourth took place at 7:13pm on the fourth floor of the library, and the fifth took place

at 7:21pm on the first floor of the library. Field Worker B used random sampling when selecting
respondents and had a 100% response rate.
Field Worker C
Field Worker C administered 5 questionnaires on Tuesday, November 17th in the Baker
Patillo Student Center as well as the Ralph W. Steen Library. The first survey took place at
11:44am in the Baker Patillo Student Center in the Office of Multicultural Affairs, the second
took place took place at 12:01pm by the Starbucks, the third took place at 12:12pm by Starbucks,
the fourth took place on the Baker Patillo Student Center Plaza, and the fifth took place on the
third floor of the library. Field Worker C administered 4 questionnaires on Wednesday,
November 18th in the Ralph W. Steen Library and the E. L. Miller Science Building. The first
survey took place at 11:31am on the second floor of the library, the second took place at
11:56am on the second floor of the library, the third took place at 1:32pm on the second floor of
the science building, and the fourth took place at 1:53pm on the third floor of the science
building. Field Worker C administered one survey on Thursday, November 19th in the Nelson
Rusche College of Business. The single survey took place at 10:45am on the fourth floor of the
college of business. Field Worker C administered one survey on Friday, November 20th in the
James I. Perkins College of Education. The single survey took place at 10:13am on the second
floor of the college of education. Field Worker C administered 3 questionnaires on Monday,
November 23rd in the Nelson Rusche College of Business and the Baker Patillo Student Center.
The first survey took place at 10:25am in Axe Handle Café on the first floor of the student
center, the second took place at 12:30pm by the C-Store on the first floor of the student center,
and the third took place took place at 1:20pm in the computer lab on the third floor of the school

of business. Field Worker C administered one survey on Monday, November 30th in the Nelson
Rushce College of Business. The single survey took place at 1:46pm on the fourth floor of the
college of business. Field Worker C used random sampling when selecting respondents and had
a 100% response rate.

Limitations
1. Some respondents who had never eaten at Urban Bricks refused to answer questions #4 &
#5.
2. Probing did not have an effect for likes/dislikes about Urban Bricks Pizza.

4. Asking for the respondent’s major did not correlate to the questions we asked them.
Primary ResearchFindings
Where does the student usually eat and have they evereaten at Urban Bricks before?
According to our research, we found that more students have eaten at Urban Bricks Pizza
compared to those who have not. This is also shown when looking at the number of students who
have eaten on campus, off campus, or both. In our research, we found out that out of the 45
students we interviewed, 31.1% of the students eat on campus, 40% eat off campus, and 28.9%
eat both. Of these people surveyed, 51.1% of the students have eaten at Urban Bricks Pizza
before.

If a student has not eatenat Urban Bricks Pizza before, why?
In our questionnaire, there were two qualifying questions, so only those who have not
eaten at Urban Bricks Pizza were able to answer them. Of the 22 respondents who had never
eaten there, only 5 students did not know why they had never eaten there. The three main
answers from the respondents were preference, price, and time. Some of the respondents stated
that they had not eaten at Urban Bricks because they prefer to eat off campus, it is too expensive,
or they just did not have the time.

When we asked the respondents what it would take to get them to eat there, 50% of the
respondents said peer purchasing/samples, specials and promotions, and self-motivation. In some
of the answers we received, the respondents stated that they would eat there if they were given a
free sample of what they have, if there were specials given out every week, and if they actually
found the motivation to actually go there and eat.
Does the image of Urban Bricks Pizza vary by meal plan, classification, etc.?
When trying to find out how the students viewed Urban Bricks Pizza, we asked if they
had a meal plan and what their classification was. We felt that we would be able to get an
understanding on how students perceived Urban Bricks Pizza if we knew this information. In
regards to the students who had meal plans, a vast majority of students who had a meal plan were
freshmen and sophomores while mainly juniors and seniors did not have a meal plan.

In reference to the cross tabulation above, we discovered that one of the biggest dislikes
among juniors and seniors was price. While comparing whether the student had a meal plan and
their respective classification we discovered that 60% of juniors, seniors and graduate students
did not have meal plans. In regards to dislikes towards Urban Bricks Pizza, about 75% of the
junior, senior and graduate students disliked price which may impose a slightly negative image
towards the establishment. With those upperclassmen having to, being older, work and provide
for themselves, the prices seem too high and would be preferred by them, to be lowered to
accommodate the student body.
What did you like about Urban Bricks?

In order to find out the perception towards Urban Bricks Pizza we asked students what
they did like about the establishment. As you can see above 39.1% of the students surveyed liked
the toppings/ingredients. The specific comments made towards the toppings and ingredients
included both the variety available and freshness/quality. About 34.8% liked the different ways
that were available to personally customize their pizza. 8.7% of students liked the taste of their
pizza, 4.3% liked the speed at which their pizza was processed and 12% of the students found
nothing likeable about Urban Bricks.

In order to gain an understanding on the faults of Urban Bricks we asked the students what they
disliked about the establishment. As seen above, 34.8% disliked the price. In regards to price, the
students spoke about the price being too high for college students and expressed interest in
coupons and weekly specials. 21.7% of the students disliked the quality of the pizza which
referred primarily to the crust. The students explained that the crust should be “fluffier” and
better tasting. Process and service tied at 4.3% for dislikes throughout the surveys. Lastly 34.8%
of the students disliked nothing from Urban Bricks Pizza. When surveyed these individuals
stated only positive things about the establishment and were satisfied with what was already
provided.

How likely are students who have previously eaten at Urban Bricks Pizza willing to eat
there again?
From the information below, by combining the strongly disagree/disagree values we were able to
find that 20 of the 23 (86.9%) students that have eaten at Urban Bricks Pizza would be likely to
eat there again. 8.7% of the students remained neutral and 4.3% claimed that they would not eat
there again. With the percentage of students that will be likely to return to Urban Bricks Pizza
being at 86.9% this ensures that repeat sales will be possible which is kety to every business.
What is the perception of Urban Bricks Pizza to the student body at SFA
With the information below, we identified 20 out of 23 students (86.9%), with both strongly
disagree/disagree combined, of students who have eaten at Urban Bricks Pizza to like the taste of
the pizzas that were received. 8.7% felt neutral in regards to taste and 4.3% did not like the taste
at all.

Conclusion:
Urban Bricks Pizza has shown that with revamping an old and outdated establishment there can
be many improvements and likes from the public as well as some dislikes. With the
improvements made at Urban Bricks Pizza the Stephen F. Austin State University student’s
largest likes included the ability to customize the pizza of their choice as well as the variety of
toppings and ingredients that were available to choose from. Some of the strongest dislikes
included the price of the pizza and/or drink and a large percentage of students claimed that they
found nothing wrong with their product. With the following information, we hope that Urban
Bricks Pizza will find the information useful and apply whatever improvements, positive or
negative, to the necessary sector of the establishment.
Recommendations
After researching the image of Urban Bricks pizza by SFA students through detailed
primary and secondary research, we would recommend Urban Bricks and all its stakeholders to
look into more advertisement and promotion of their product. While most people that tried it
seemed to find their food very good, almost half of our respondents have never eaten there, some
haven’t even heard about it. With other competitors such as the widely popular Chick-Fila and
Panda Express right next door Urban Bricks should look to set a strong image of itself to stand
out from its opponents. While people who ate it claimed to of liked it, price was a reoccurring
concern of the students interviewed as they thought it was too high for the average college
student to afford. With all this info promotions, special sales and maybe even samples should be
administered by Urban Bricks in our opinion to entice more students to want to try there pizza
and to get them more notoriety on campus.

They are famously known for allowing customers to create their own pizza with all the ingredients and makings of the pizza right in front of their customer like it would be in a local Subway restaurant. The customer can then choose their own ingredients making a special pizza created in their favor. While most other pizza chains serve already made pizza Urban Bricks Pizza’s renovated and new approach should attract more customers. Our goal is to find out what the students at Stephen F. Hypothesis The student body at SFA enjoys the revamped Urban Brick Pizza and they feel like it brings more variety to what is already there. What is Urban Bricks Pizza? Urban Bricks Pizza is a relatively new Texas-based franchise that focuses on “Making a better world, one slice at a time…!” (3). Their philosophy focuses on promoting a healthier lifestyle for their patrons as well as making food easily accessible and deliverable. With franchises spreading around the state of Texas they also thrive on supporting their local communities, providing purpose and development within their organizations and making sure that the customers and employees are well taken care of. Who is the owner/manager of the concept at SFA? The owner of the Urban Bricks Pizza here at Stephen F. Austin State University is Ken Mace. He is also operator of the Urban Bricks Pizza that will be “coming soon” in Houston, TX. A man by the name of Sammy is the owner of the actual Urban Bricks brand. Sammy launched the first Urban Bricks Pizza in San Antonio, TX.
  • 4. 5 Location & Competition Urban Bricks Pizza is currently located in four cities: Austin, San Antonio, San Marcos, and Nacogdoches. In the current cities they are expanding with multiple “coming soon” phrases to gain the attention of current patrons and raise awareness of the expansion plans that they have in store. They are currently seeking out various locations in Houston as well. Urban Bricks is striving to open their franchise at locations that vary from entertainment centers, urban storefronts, mixed-use projects, upscale shopping, colleges and universities, university adjacent shopping centers, and malls. The Urban Bricks Pizza at SFA is located on campus in the Baker Patillo Student Center. Their competition on campus include: Chick-Fil-A, Panda Express, Which Wich, Zoca, Sushic, Marble Slab Creamery and Great American Cookie Company. Not only do they have to compete with these food chains, they also have to compete with various food chains off campus such as McDonald’s, Taco Bell, Raising Cane’s, and many more. With these various food establishments, the SFASU student body has multiple options to choose from. Urban Bricks Pizza contains a competitive on-campus advantage because they are the only establishment that serves both pizzas and salads. Not only that, but Urban Bricks Pizza also delivers as well. The hours of operation for the current dining establishments vary in closing time between the hours of five o’clock and nine o’clock. With this being the case Urban Bricks Pizza contained an advantage over four competing food vendors because of their closing time which is eight o’clock. How does the ordering process work? They then proceed to ask you what type of pizza you would like; whether it be a preset pizza or a build-your-own pizza. If you select a preset pizza, you will then be sent to the end of the counter where you can pay for your order. If you decide to build your own pizza, they will ask you what type of dough you prefer for your crust, what sauce you would like, and then proceed to adding however many toppings you desire. After you have built your own pizza, they will cook it for you in the brick oven that is visible for the consumer to see. They will lastly ask if there are any type of sauce drizzles that you may prefer on top of the pizza once it is cooked. That is when you proceed to the end of the counter to pay for your order. If you select a salad, you will go through the same process as you would if you were building your own pizza. This ordering process is similar to Subway’s ordering process in which it is “easy to follow as employees walk customers through the making of their sandwich, ingredient-by-ingredient.” (10). How can you pay? Dining Dollars, cash, credit, etc. Urban Bricks Pizza accepts all forms of payment including SFA Dining Dollars, credit/debit cards, and cash. What are the hours of operation and how do they compare to off campus pizza establishments? Urban Bricks Pizza is open Monday-Friday from 10:30 a.m. -8 p.m. and Saturday-Sunday from 12:00 p.m. -8:00 p.m. The three main pizza establishments neighboring one another within the Nacogdoches area are Pizza Hut, Dominoes and Hungry Howies. All three of the franchises nightly closing hours ranges from 11:00 p.m. to midnight (6). If SFASU students, both on and off campus, were craving a pizza after 8 o’clock then Urban Bricks would be missing out on
  • 6. 7 potential sales. All actual financial numbers would not be known unless financial information was given to calculate. “Restaurants need to shoulder more expenses to keep the lights on longer—but the crowds usually aren't that big at odd hours, and customers don't end up spending very much.” (7) Seeming as longer hours pay not generally produce more revenue Urban Bricks is at a slight disadvantage due to the “weekend night rush” when students are feeling lazy and do not feel like going to physically get food. How many different toppings and crusts does Urban Bricks offer? Urban Bricks Pizza offers both “build your own pizza” as well as foundation pizzas. The “build your own” food franchise has taken off and seen great momentum with no signs of slowing down or stopping. “Perhaps the best indicator that this trend is not going to decline any time soon is that fact that many of the traditional fast food restaurants have taken notice by revamping their menus, offering more premium choices, and upgrading the dining environment.” (8) Urban Bricks achieved all three of these aspects of a booming franchise and was able to offer the SFASU students better ingredients as well as toppings and ways to combine them. The foundation pizzas include eight different types that contain the same ingredients regardless of which establishment the patron attends. Some of these foundation pizzas include the three little pigs, buffalo chicken, white mushroom and many more. The patrons also have the ability to add and take away any ingredients that they want if they choose to slightly personalize their pizzas. With the “build your own pizza” the patron is able to choose from an array of different crusts, sauces, cheeses, sauce drizzles and multiple toppings that include both meats and vegetables. Urban Bricks Pizza also carries salads that include a Greek, Caesar, and Almond Banana with the option to build your own salad as well. With having many options to choose from including
  • 7. 8 the “build your own pizza” and personalized salads, it ties into the Urban Brick philosophy to promote healthier living which is always an amazing idea to have on a college campus. Do they offer any healthier ingredient options for students? As stated in their philosophy one of the main priorities of Urban Bricks Pizza is to promote a healthier living while making healthier food which is a major advantage that they contain. Compared to other companies Urban Bricks stands out because of the reach available towards the vegan and vegetarian community. Some of Urban Bricks competition that provide a healthy alternative including both Chipotle and Subway which have the same process of handling the order for the consumers, have no problem with displaying their ingredients online for the consumers to see. Subway does voluntarily provide the information to protect themselves against any lawsuits and to legitimately inform the consumer on what they are eating. Both establishments have their nutritional information readily available online for any curious and health conscious consumer to view (4). Consumers are more likely to respond better when they are able to get their questions answered. In regards to a fellow pizza establishment in the Nacogdoches area that delivers and appears to have a good choice of healthy ingredient options does not display their ingredients on any forum (5). With Papa John’s maintaining their ingredients as a “secret” it seems as if they may or may not have something to hide which would not go well with the consumer. Luckily Urban Bricks has any nutritional information available for the consumer to enjoy which is good in the health conscious society we live in today. Vegetarian students at SFA can enjoy the large range of vegetarian made toppings for their pizza, making it easy to create many assortments personalized towards their preferences. Urban Bricks also offers gluten free crust for students avoiding gluten in their diet.
  • 8. 9 Does having the Urban Bricks Pizza establishment on campus differ from having it in an off campus location? For the 2014-2015 school year “the Residence Life Department provided housing for approximately 5,000 students living in 16 residence halls on campus” (2). The students need access to food even if it becomes later in the day and the remaining food establishments have closed. According to Sam Oches’ article on QSR Magazine, “Millennial and Gen Z customers are the Holy Grail for quick-serve brands, and college campuses are ground zero for securing their lifelong loyalty” (1). The Generation Z demographics seems to thrive on fast food and faster service. New delivery services such as Munchies Food Delivery have been thriving both on and off campus. They are a food delivery system in which they deliver food from any and everywhere in the Nacogdoches area. They deliver food from restaurants that do and do not deliver which is a plus for those students who prefer to enjoy food from places like Wingstop Chilis and Whatburger. Not only is the business ran by SFASU students but their hours of operation are Monday-Sunday from 8 a.m. to midnight. The span of time between opening and closing is in competition with Urban Bricks because of the easy accessibility and social media presence (9). There are specific developmental tools that assist in establishing whether or not it will be a profitable business move to open a dining establishment on a college campus. Those tools assisted with placing a pizza and salad location in an area where there are many other dining areas so that there may be no repetition or complacency for the student patrons. The Urban Bricks Pizza also has the opportunity to indulge in the profits of those who do not live on campus but may need to satisfy their specific hunger need. Do they deliver? How does delivery work? What number do you call?
  • 9. 10 Urban Bricks does deliver to on-campus students. Only delivering to places on campus is a big disadvantage. The new student-run company, Munchies, not only delivers, but they will go out and get the food “from any restaurant of choice right to your dorm or residence” (12). The delivery process works by calling in to Urban Bricks, and then placing your order. The phone number to call to place an order is “(936) 468- PIZA (7492)” (11). What day did they open on campus? When was the grand opening? Urban Bricks Pizza made its debut on SFA’s campus on August 31, 2015. The grand opening & ribbon cutting took place on September 16, 2015. Conclusion: Urban Bricks Pizza is a relatively new establishment that follows many of the top food distributing processes, in regards to the “build-your-own” concept, which has remained a focus point within the secondary information. Subway and Chipotle are the firms that Urban Bricks Pizza resembles as far as distribution of pizza within the establishment and freshness of ingredients. Freshness and variety of ingredients are primary reasons on why Urban Bricks Pizza has been able to flourish within the upcoming pizza-making industry. If and when there are new innovations within the “build-your-own” sector of the food industry then Urban Bricks Pizza should adapt and improve, if necessary. Needfor Primary Research In order to find our objective, primary research is needed. There is not enough information to support our objective. We are hoping to find more information about how the student body at SFA views the newest addition to the Baker Patillo Student Center. We also want to see if image of Urban Bricks Pizza varies by age, gender, classification. We also want to find
  • 10. 11 out what the students like and dislike about Urban Bricks Pizza, but also see if there are things that need to be improved. We hope to discover enough information that will support our list of needed primary information. During our research, we want to find if our research supports our hypothesis and our objective. Methodology: Our objective was to gather opinions of Stephen F. Austin State University students, ranging from freshman to graduate students on their image of Urban Bricks Pizza. To obtain that information, we created a research questionnaire which had many different types of questions. Our market research team administered the questionnaire through personal face-to-face surveys on the campus of Stephen F. Austin State University. We interviewed people throughout the campus in the Baker Patillo Student Center, the Ralph W. Steen library, the Austin Building, and outside of the student’s dorms. Although we attempt to interview fifty-one students, our sample size consisted of forty-five students who actually participated in the survey. We were able to achieve an eighty-eight percent response rate with a twelve percent rejection rate. Field Worker A: Field Worker A administered 3 questionnaires on Monday, November 16th in the Ralph W. Steen library. The first survey took place at 1:14pm on the third floor of the library, the second survey took place at 2:01pm on the third floor of the library, and the third survey took place at 2:11pm at the entrance of the library. Field Worker A administered 1 questionnaire on November 18th starting at 4:05pm in the East College Cafeteria. Field Worker A administered 11 questionnaires on December 3rd in the library and at Lumberjack Landing. The first survey took place at 2:17 in the front of the library, the second took place at 2:23 on the second floor of the
  • 11. 12 library, and the third took place at 2:34 on the third floor of the library. The fourth survey took place at 3:08pm just outside Lumberjack Landing, the fifth took place at 3:17pm in the front of Lumberjack Landing, the sixth took place at 3:22pm in the front of Lumberjack Landing, the seventh took place at 3:30pm inside of Lumberjack Landing on the first floor, and the eighth took place at 3:45pm inside Lumberjack Landing. Later that night, the ninth survey took place at 8:24pm on the third floor of the library, the tenth took place at 8:30pm on the fourth floor of the library, and the eleventh took place at 8:38 on the fourth floor of the library. Field Worker A used random sampling when selecting respondents and had a 71.4% response rate. Field Worker B: Field Worker B administered 8 questionnaires on Monday, November 16th in the Baker Patillo Student Center. The first survey took place at 1:13pm in the Baker Patillo Student Center by Chick-Fil-A, the second took place at 1:30pm by Chick-Fil-A, the third took place at 1:41pm by Zoca, the fourth took place at 1:47pm by Panda Express, the fifth took place at 1:52pm by Which Wich, the sixth took place at 1:57pm by Chick-Fil-A, the seventh took place at 2:04pm by Chick-Fil-A, and the eighth took place at 2:08pm by Chick-Fil-A. Field Worker B administered 2 questionnaires on Friday, November 20th. The first survey took place at 10:34pm in the Austin building, and the second took place at 11:00pm in the Baker Patillo Student Center by Chick-Fil- A. Field Worker B administered 5 questionnaires on Monday, November 23rd in the Baker Patillo Student Center and the Ralph W. Steen library. The first survey took place at 3:05pm in the Baker Patillo Student Center by Chick-Fil-A. Later that day, the second survey took place at 7:03pm on the fourth floor of the day, the third took place at 7:09pm on the fourth floor of the library, the fourth took place at 7:13pm on the fourth floor of the library, and the fifth took place
  • 12. 13 at 7:21pm on the first floor of the library. Field Worker B used random sampling when selecting respondents and had a 100% response rate. Field Worker C Field Worker C administered 5 questionnaires on Tuesday, November 17th in the Baker Patillo Student Center as well as the Ralph W. Steen Library. The first survey took place at 11:44am in the Baker Patillo Student Center in the Office of Multicultural Affairs, the second took place took place at 12:01pm by the Starbucks, the third took place at 12:12pm by Starbucks, the fourth took place on the Baker Patillo Student Center Plaza, and the fifth took place on the third floor of the library. Field Worker C administered 4 questionnaires on Wednesday, November 18th in the Ralph W. Steen Library and the E. L. Miller Science Building. The first survey took place at 11:31am on the second floor of the library, the second took place at 11:56am on the second floor of the library, the third took place at 1:32pm on the second floor of the science building, and the fourth took place at 1:53pm on the third floor of the science building. Field Worker C administered one survey on Thursday, November 19th in the Nelson Rusche College of Business. The single survey took place at 10:45am on the fourth floor of the college of business. Field Worker C administered one survey on Friday, November 20th in the James I. Perkins College of Education. The single survey took place at 10:13am on the second floor of the college of education. Field Worker C administered 3 questionnaires on Monday, November 23rd in the Nelson Rusche College of Business and the Baker Patillo Student Center. The first survey took place at 10:25am in Axe Handle Café on the first floor of the student center, the second took place at 12:30pm by the C-Store on the first floor of the student center, and the third took place took place at 1:20pm in the computer lab on the third floor of the school

The single survey took place at 1:46pm on the fourth floor of the college of business. Field Worker C used random sampling when selecting respondents and had a 100% response rate. Each field worker spent twenty hours, at a wage of fourteen dollars an hour on questionnaire development. Each field worker spent twenty five hours, at a wage of twenty-six dollars an hour on analysis of questionnaire. Limitations 1. Some respondents who had never eaten at Urban Bricks refused to answer questions #4 & #5. 2. Probing did not have an effect for likes/dislikes about Urban Bricks Pizza. 3. The time & date the respondents ate there. 4. Asking for the respondent’s major did not correlate to the questions we asked them. Primary ResearchFindings Where does the student usually eat and have they evereaten at Urban Bricks before? According to our research, we found that more students have eaten at Urban Bricks Pizza compared to those who have not. This is also shown when looking at the number of students who have eaten on campus, off campus, or both. In our research, we found out that out of the 45 students we interviewed, 31.1% of the students eat on campus, 40% eat off campus, and 28.9% eat both. Of these people surveyed, 51.1% of the students have eaten at Urban Bricks Pizza before.
  • 15. 16 If a student has not eatenat Urban Bricks Pizza before, why? In our questionnaire, there were two qualifying questions, so only those who have not eaten at Urban Bricks Pizza were able to answer them. Of the 22 respondents who had never eaten there, only 5 students did not know why they had never eaten there. The three main answers from the respondents were preference, price, and time. Some of the respondents stated that they had not eaten at Urban Bricks because they prefer to eat off campus, it is too expensive, or they just did not have the time.
  • 16. 17 When we asked the respondents what it would take to get them to eat there, 50% of the respondents said peer purchasing/samples, specials and promotions, and self-motivation. In some of the answers we received, the respondents stated that they would eat there if they were given a free sample of what they have, if there were specials given out every week, and if they actually found the motivation to actually go there and eat. Does the image of Urban Bricks Pizza vary by meal plan, classification, etc.? When trying to find out how the students viewed Urban Bricks Pizza, we asked if they had a meal plan and what their classification was. We felt that we would be able to get an understanding on how students perceived Urban Bricks Pizza if we knew this information. In regards to the students who had meal plans, a vast majority of students who had a meal plan were freshmen and sophomores while mainly juniors and seniors did not have a meal plan.
  • 17. 18 In reference to the cross tabulation above, we discovered that one of the biggest dislikes among juniors and seniors was price. While comparing whether the student had a meal plan and their respective classification we discovered that 60% of juniors, seniors and graduate students did not have meal plans. In regards to dislikes towards Urban Bricks Pizza, about 75% of the junior, senior and graduate students disliked price which may impose a slightly negative image towards the establishment. With those upperclassmen having to, being older, work and provide for themselves, the prices seem too high and would be preferred by them, to be lowered to accommodate the student body. What did you like about Urban Bricks?
  • 18. 19 In order to find out the perception towards Urban Bricks Pizza we asked students what they did like about the establishment. As you can see above 39.1% of the students surveyed liked the toppings/ingredients. The specific comments made towards the toppings and ingredients included both the variety available and freshness/quality. About 34.8% liked the different ways that were available to personally customize their pizza. 8.7% of students liked the taste of their pizza, 4.3% liked the speed at which their pizza was processed and 12% of the students found nothing likeable about Urban Bricks.   • 19. 20 In order to gain an understanding on the faults of Urban Bricks we asked the students what they disliked about the establishment. As seen above, 34.8% disliked the price. In regards to price, the students spoke about the price being too high for college students and expressed interest in coupons and weekly specials. 21.7% of the students disliked the quality of the pizza which referred primarily to the crust. The students explained that the crust should be “fluffier” and better tasting. Process and service tied at 4.3% for dislikes throughout the surveys. Lastly 34.8% of the students disliked nothing from Urban Bricks Pizza. When surveyed these individuals stated only positive things about the establishment and were satisfied with what was already provided. 34.8% 34.8% 21.7% 4.3% 4.3%
  • 20. 21 How likely are students who have previously eaten at Urban Bricks Pizza willing to eat there again? From the information below, by combining the strongly disagree/disagree values we were able to find that 20 of the 23 (86.9%) students that have eaten at Urban Bricks Pizza would be likely to eat there again. 8.7% of the students remained neutral and 4.3% claimed that they would not eat there again. With the percentage of students that will be likely to return to Urban Bricks Pizza being at 86.9% this ensures that repeat sales will be possible which is kety to every business. What is the perception of Urban Bricks Pizza to the student body at SFA With the information below, we identified 20 out of 23 students (86.9%), with both strongly disagree/disagree combined, of students who have eaten at Urban Bricks Pizza to like the taste of the pizzas that were received. 8.7% felt neutral in regards to taste and 4.3% did not like the taste at all.
  • 21. 22 Conclusion: Urban Bricks Pizza has shown that with revamping an old and outdated establishment there can be many improvements and likes from the public as well as some dislikes. With the improvements made at Urban Bricks Pizza the Stephen F. Austin State University student’s largest likes included the ability to customize the pizza of their choice as well as the variety of toppings and ingredients that were available to choose from. Some of the strongest dislikes included the price of the pizza and/or drink and a large percentage of students claimed that they found nothing wrong with their product. With the following information, we hope that Urban Bricks Pizza will find the information useful and apply whatever improvements, positive or negative, to the necessary sector of the establishment. Recommendations After researching the image of Urban Bricks pizza by SFA students through detailed primary and secondary research, we would recommend Urban Bricks and all its stakeholders to look into more advertisement and promotion of their product. While most people that tried it seemed to find their food very good, almost half of our respondents have never eaten there, some haven’t even heard about it. With other competitors such as the widely popular Chick-Fila and Panda Express right next door Urban Bricks should look to set a strong image of itself to stand out from its opponents. While people who ate it claimed to of liked it, price was a reoccurring concern of the students interviewed as they thought it was too high for the average college student to afford. With all this info promotions, special sales and maybe even samples should be administered by Urban Bricks in our opinion to entice more students to want to try there pizza and to get them more notoriety on campus.
