What is Mezcal? It is a cultural spirit, usually, made in small batches by farmers using ancient techniques and tools.

1. Mexican spirit, made of 100% agave, obtained by distilling the fermented
juices of local varieties of agave. The yeast must also be local, spontaneous
and wild or cultivated. The agave must be cooked and procured from within
the territory of the Denomination of Origin.
