thousands of Chinese died bursting with cold and hunger at the cost of
finishing the American transcontinental railroad. When the railway was
finished in 1869, there were thousands of Chinese who were left homeless
and wandering the glittering USA.
During that short coexistence with the whites, the Chinese looked for a
way to survive by eating the leftovers left by the Irish and Mormons, and
that is how the spring rolls, the chopsueys and the Three Delicious Rice
were born.
