Objective : To ensure that able to set a table top for working meal according to standard
Task Breakdown
STEP (How) STANDARD EQUIPMENT
REQUIRED
1. Select a tray • To use large oval tray
• Ensure is clean, dry
• Good condition

2. Prepare mise en place • As base on the menu serve
• Ensure the no stain or chip
• Well polish
• Clean dry and in good condition’
• Neatly stacked on tray and placed on the
trolley
• Equipment neatly stacked on tray and placed
on the trolley
• Glassware should in racks
• Ensure one type of equipment per tray
• Sufficient for the entire event
Equipment needed:-
1. Side plate
2. Dinner fork
/Knife
3. Salt/Pepper
4. Centerpiece
5. Buffet tags
6. Folded Napkins

3. Push the trolley • Ensure the path way for the tray is clear Trolley
4. Set table • Separate table for meal
• Proceed as per setting for buffet meal
• Table form meeting used for meal
• All equipment require is placed on the buffet
line for guest to help themselves
Note:-Regardless of situation the setup must be
done prior to stat of meeting in order to avoid
the quest complaint about the noise
• Separate water station & drink station on
buffet line
• Ensure adhere strictly to instruction listed
on the event order
• Verify instruction with organizer at the
beginning of the meeting
