Cooking steak is one of the most popular ways of cooking beef for
special occasions, Sunday dinners, and power lunches. Steak is that
thick slab of meat from the hindquarters of the cow. It’s most often of
high quality, with grades from the United States Department of
Agriculture (USDA) as the most often used guidelines. Cooking steak
can mean three things—through broiling in the oven, grilling over
charcoal or gas grill, or pan-frying.

For the best output when cooking steak, start with a good quality meat
from the butcher. It should produce a dish that’s juicy and flavourful on
the inside and cooked according to the diner’s preference—rare,
medium rare, medium, medium well done and well done. The
seasoning can be as simple as salt and pepper, with a drizzle of olive
oil. You can also create a spice rub, an herb butter, or a special
marinade.
When cooking steak, keep in mind that you should not overcook the
meat because it will really dry out and become tough and leathery.
For best results, use a steak that is at least one-inch thick, such as a strip
steak, porterhouse, or T-bone steak. Relax when you’re on the grill—
turn the meat just once or twice so that you let the meat cook to
perfection. Don’t prod the meat with a fork, instead use a pair of metal
tongs or a metal turner to do the job. The key is minimal handling so
that the juices remain intact and allowed to keep the meat moist.

Don’t serve the steak immediately—let the steak rest for a few minutes.
Not only will it tenderize the meat as it continue to cook but it will also
help redistribute the juices that way.
