STEALTH VEGETABLES HAVE BEEN A HIT
WITH THE U9S
‘VEGETABLE BLITZ’ BOLOGNESE
To get extra vegetables into my son, I make a turkey bolognese for my
family. I blitz extra vegetables like mushrooms, cauliflower and broccoli
in the blender until they form a paste. I then add this to the usual tomato
sauce. The boys are eating more vegetables than normal because they
don’t know that they’re in there!

COUS COUS AS A QUICK AND EASY
CARB OPTION
Giant cous cous is a good alternative to pasta or rice if you’re short
on time. It only takes 6-8 minutes to cook, and you can throw your
vegetables in with it to boil. I find that green beans work well (chop
into inch long pieces) or mange tout. I usually put a pinch of turmeric,
cinnamon and cayenne pepper in with mine to give it some colour and
spice. Just like pasta and rice, you can also cook it with stock to add a bit
more flavour.
A TRIED AND TESTED HOST FAMILY
TRICK FOR DISGUISING STEWS
The boys I look after don’t like stews and casseroles, so instead, I make
the stews with various meat and lots of vegetables in them including
spinach (which they don’t like) and then when its cooked, I drain off
the gravy, get a ready-made Jus Rol short crust pastry (to make life
easy) and place on top, glaze with beaten egg and bake. Hey presto!
A gorgeous pie which they love – it’s so tasty! I usually serve this with
more fresh vegetables and, of course, the gravy from the stew (that they
don’t like! Ha!)

Buy an apple slicer. It is so quick to prepare
fresh apple slices which I put in my son’s
lunchbox with some Skye yoghurt as a dip.
You can also use it to make cucumber batons
which can be eaten with hummus.
