Professional experience July 2008-March2013 onprivate M/Y RENAISSANCE 30mand from March 2013 - July 2013 on private M/Y Apollo 50m Employer:Fokida Yachting LTD Position:Chef The private M/Y Renaissance is based in Monaco and the owner is using the boat all the summer. I was Personal Chef for the owner caring the meals for its guest, traveling with him to his villlas and his boats. M/Y Apollo was the new build boat of the owner, where I teerminate my contract. Owner is very dinamic person, who eats always on boat and had up to 25-30 guests I was cooking for. The owner eats very healthy stile, like simply Mediterranean, Italian and Japanese cuisine witch include a lot of fresh salads, fish, seafood, fruits and lovely deserts. May 2007-July 2008 on private/charter M/V LAUREN L 92m Employer: Liveras Yachts Position:Head Chef Lauren L is mega charter and also private yacht which is based in Monaco. The yacht is cruising Mediterranean in the summer season and Maldives in the winter. The numbers of the guest are up to 40, except for parties, weddings and boat shows when could be up to 200 guests. My responsibility as Head Chef was planning and organizing every charter or event on the boat along with the Owner and the Cruise Director Making different menus, food planning, all the provisioning, coordinating my team providing everything to ensure the complete success of every charter. The cuisine was very different depending of the guest. Different canapés, long Breakfasts and Brunches, Rich Buffet stile Lunches and Dedicate Set up Diners. Parties made by different style and of cuisine like: French, Italian, Spanish, Greek, Thai, Indian, Arabic, Japanese, vegetarian, vegan, kosher, etc. September 2006-March2007onprivate M/Y MARACUNDA 55m Employer: RoyalYachts- Qatar Position:Head Chef The private M/Y Maracunda was the second yacht I worked in Qatar for the Royal Family The numbers of guest were 12-16 people. I was in charge of preparing and planning the meals for the guest along with my Second Chef and all additional duties about crew meals and the galley maintains. The tip of cuisine the guest prefers was Mediterranean, Italian, Thai, Indian and his special Diet all served on Buffet stile. The boat was used with a different guest from the Royal Family and the Owner.

April 2006-September2006 on private M/Y Al ADAID 38m Employer: RoyalYachts- Qatar Position:Head Chef The private M/Y Al Adaid was the first yacht I join in Qatar The only one using the boat was the owner along with his friends and family. He was visiting the yacht every week going for trip and rest around. The numbers of the guest were 10-15 people. Owners eat very healthy food and have a special diet witch I had to provide. I was Solo Chef caring also for the crew food and galley maintains. January 2004-April 2006 onprivate/charter M/Y ANNALIESSE 87m Employer: Liveras Yachts Position:Sous Chef Annaliesse was very busy charter and private yacht, cruising in Mediterranean and Caribbean. The number of guest was up to 36 except the parties when we have been with 200 guests on board. I was responsible with all cooking inside the kitchen with the help of the Crew Chef and two other Cooks by the management of the Head Chef.
