Method
• Take a chicken thigh/leg.
• In a frying pan, sauté spinach with salt and
pepper.
• Put the spinach mixture and goat cheese on the
chicken thigh/leg.
• Roll the thigh/leg with the filling.
• Pan sear the chicken thigh/leg and cook in the
oven till well done.
• For mustard potato, boil and dice potatoes and
sauté in frying pan with chopped garlic, Pommery
mustard, salt and pepper.
• Serve with sautéed vegetable and Herb Jus.
