WATER TO MAKE A SAUCE. HEAT TO SIMMER AT 225
DEGREES FOR 15 MINUTES, STIRRING OCCASIONALLY.
REMOVE ABOUT 3/4 OF THE SAUCE INTO BOWL OR POT,
LEAVING A LAYER IN THE DUTCH OVEN.
SPRINKLE A LAYER OF CHEESE OVER MIXTURE
REMAINING IN DUTCH OVEN. LAY TWO TORTILLAS ON

SLICE THE TOFU IN 1/4-1/2 INCH SLICES FROM
THE SHORT END. IN A BOWL OR 9×9 PAN,
MIX THE FLOUR, BAKING POWDER, GARLIC
POWDER, CHILLI POWDER, ONION POWDER,
SALT AND GROUND PEPPER. POUR THE SOY
CREAM INTO A BOWL. DREDGE THE TOFU
SLICES IN THE FLOUR MIXTURE, COAT WELL.
DIP THE FLOURED TOFU INTO THE SOY
CREAM. MAKE SURE THE SLICES ARE FULLY
COVERED. DREDGE THE TOFU IN THE FLOUR
MIXTURE AGAIN. HEAT OIL IN A HEAVY POT
APPROPRIATE FOR FRYING (LIKE A DUTCH
OVEN) OR DEEP FRYER TO 360 DEGREES.
SHAKE OFF THE EXCESS FLOUR AND DEEP
FRY THE TOFU SLICES UNTIL GOLDEN BROWN
ABOUT 2-3 MINUTES. ADJUST FRYING TIME
AS NEEDED. REMOVE THE TOFU FROM THE
FRYER AND PLACE THE HOT TOFU ON A WIRE
RACK THAT HAS BEEN PLACED OVER SOME
PAPER TOWELS. DON'T LET THE TOFU SIT ON
THE PAPER TOWELS AS IT WILL BECOME
SOGGY. SEASON WITH SALT AND PEPPER
AS DESIRED. SERVE HOT.
