Here's a simple and delicious recipe!
The Super Keto Diet. The Ultimate Keto
Recipe Book.
Ingredients:
● 2 boneless, skinless chicken breasts
● 2 tablespoons olive oil
● 1 teaspoon dried Italian seasoning
● Salt and pepper to taste
● 1 medium-sized zucchini, sliced
● 1 medium-sized bell pepper, sliced
● 1 small cauliflower head, cut into florets
● 2 cloves garlic, minced
● 2 tablespoons grated Parmesan cheese
● Fresh parsley for garnish
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Place the chicken breasts on a baking sheet lined with parchment paper.
Drizzle 1 tablespoon of olive oil over the chicken breasts, then sprinkle with
Italian seasoning, salt, and pepper. Make sure both sides of the chicken are
well coated.
3. In a separate bowl, toss the sliced zucchini, bell pepper, and cauliflower florets
with the minced garlic, remaining tablespoon of olive oil, salt, and pepper.
4. Spread the vegetables evenly on another baking sheet.
5. Place both the chicken and vegetables in the preheated oven. Bake for about
20-25 minutes or until the chicken is cooked through and the vegetables are
tender and slightly browned.
6. Remove the baking sheets from the oven. Sprinkle the grated Parmesan
cheese over the roasted vegetables.
7. Let the chicken rest for a few minutes before slicing it.
8. Serve the sliced chicken alongside the roasted vegetables. Garnish with fresh
parsley.
