Mental health has been in the news quite a bit lately. Dozens of U.S. states are currently suing Meta for contributing to the youth mental health crisis by inserting addictive features into their products, while the U.S. Surgeon General is touring the nation to bring awareness to the growing epidemic of loneliness and isolation. The country has endured periods of low national morale, such as in the 1970s when high inflation and the energy crisis worsened public sentiment following the Vietnam War. The current mood, however, feels different. Gallup recently reported that national mental health is at an all-time low, with few bright spots to lift spirits.
To better understand how Americans are feeling and their attitudes towards mental health in general, ThinkNow conducted a nationally representative quantitative survey of 1,500 respondents and found some interesting differences among ethnic, age and gender groups.
Technology
For example, 52% agree that technology and social media have a negative impact on mental health, but when broken out by race, 61% of Whites felt technology had a negative effect, and only 48% of Hispanics thought it did.
While technology has helped us keep in touch with friends and family in faraway places, it appears to have degraded our ability to connect in person. Staying connected online is a double-edged sword since the same news feed that brings us pictures of the grandkids and fluffy kittens also feeds us news about the wars in Israel and Ukraine, the dysfunction in Washington, the latest mass shooting and the climate crisis.
Hispanics may have a built-in defense against the isolation technology breeds, owing to their large, multigenerational households, strong social support systems, and tendency to use social media to stay connected with relatives abroad.
Age and Gender
When asked how individuals rate their mental health, men rate it higher than women by 11 percentage points, and Baby Boomers rank it highest at 83%, saying it’s good or excellent vs. 57% of Gen Z saying the same.
Gen Z spends the most amount of time on social media, so the notion that social media negatively affects mental health appears to be correlated. Unfortunately, Gen Z is also the generation that’s least comfortable discussing mental health concerns with healthcare professionals. Only 40% of them state they’re comfortable discussing their issues with a professional compared to 60% of Millennials and 65% of Boomers.
Race Affects Attitudes
As seen in previous research conducted by ThinkNow, Asian Americans lag other groups when it comes to awareness of mental health issues. Twenty-four percent of Asian Americans believe that having a mental health issue is a sign of weakness compared to the 16% average for all groups. Asians are also considerably less likely to be aware of mental health services in their communities (42% vs. 55%) and most likely to seek out information on social media (51% vs. 35%).

본 레시피 북에 실린 이미지들은 모두 한국식용곤충
연구소의 연구원들이 만든 초창기 메뉴 이미지들입니
다. 제목이 “식용곤충 모르고 만들면 이렇게 된다?!”
에서 나타내고 싶은 의미는 식용곤충식 메뉴을 창작
하시는 다른 분들의 능력이나 아이디어를 폄하하고자
하는 것이 아니라 “조리는 과학이며 따라서 많은 노력
과 시간 그리고 열정”이 필요하다는 것을 보여드리고
자 하는데 그 의미가 있습니다. 최근 많은 분들이 식
용곤충식 메뉴를 인터넷이나 블로그에 올려주셔서 그
관심에 깊은 감사의 말씀을 드립니다. 그러나 아직 한
국사회에서 식용곤충식이란 아주 생소하고 다소 이질
적인 식재료로 취급될 수 있기에 가능한 친근하고 거
부감 없으며 생활속에서 자연스럽게 접할수 있는 모
양, 맛, 향을 갖추고 있어야 한다고 생각합니다. 저변
이 확대되고 난 후에 기호에 맞게 다양화를 모색하는
것이 식용곤충식 활성화를 위한 일이라 생각되어 본
레시피 북을 출판하게 되었습니다.
메뉴개발자들은 모두 이러한 과정을 겪고 오늘의 식
용곤충식 전문 조리사가 되었습니다. 앞으로 식용곤
충식 메뉴를 개발하고자 하는 많은 분들께 지침서로
써, 열정과 아이디어 그리고 보다 소비자의 인식을 고
려하면서 메뉴개발을 해달라는 부탁의 의미를 전달하
고자 합니다. 자 그럼~ 망작의 세계로 떠나보시죠~

5. 중식? 양식? 일식? 아니면...
Chef comment: 각각의 구성은 참 좋았다. 명란의 짠맛에 어울리는 귀뚜라미의 고소함
과 크리스피함을 느낄수 있을것이고, 볶음밥에는 분말을 혼합해 볶아 고소함을 더했으며, 밀
웜은 그대로 튀겨 흡사 감자칲처럼 바삭함이 있다. 마지막으로 콩고기와 귀뚜라미 분말을 사
용하여 완자와 케첩소스를 뿌렸다. 볶음밥은 단백질을 식용곤충의 단백질을 흡수한 쌀 등을
사용하였다면 맛과 모양을 잡을수 있었을 것이고, 콩고기+귀뚜라미 분말은 모양을 좀더 작게
반죽하고 야채 등을 섞어 튀기거나 하였으면 좀더 모양도 식감도 올라갔을 것이다. 가장 핵심
인 명란 속 귀뚜라미는 차라리 명란젓 상태일 때 분말 또는 액상과 혼합한 뒤 굽거나 튀겼다면
지금 같은 메뉴는 나오지 않았을 텐데.. 머릿속 상상을 대회나 행사 며칠 전 진짜 메뉴로 만드
는 것은 역시 “뚝딱” 한다고 되는 일이 아니었다.

6. 파리 끈끈이 스파게티?
“까만 귀뚜라미들이 토마토 스파게티 표면에 쫘~악
붙어있는 충격의 비주얼”
Chef comment: 토마토 스파게티인데 귀뚜라미가 너무 부각되어 있다.
귀뚜라미 토핑보다는 토마토 소스를 끓일 때 첨가하여 볶았다면… 토핑은
서양요리인 스파게티에 있어 감초 같은 역할이지만 막 쓰시면 안 된다는 걸
깨달았다.

7. 버무린 건지...음식물 처리한건지...
“신선한 채소류에 아무렇게나 드레싱하면
무조건 샐러드라는 생각은 너무...”
Chef comment: 샐러드 위에 뿌린 분태 형태의 귀뚜라미는 일반 샐러드의 견
과류나 건포도, 블루베리 등과 같은 아삭하고 쫄릿한 식감을 살리기 위함과 동일
한 의미로 보여진다. 다만 식자재의 특성을 고려하지 못했다. 수분을 흡수한 귀뚜
라미 분태의 맛은 미쳐 상상하지 못한 음식이 되어벼렸다.

8. 다 된 파스타에 흙을 뿌렸다...
“어째서 이 당시에는 이런 상상뿐이었을까
그저 토핑으로만 쓰면 식용곤충 음식이라 생각했다...”
Chef comment: 쿠&크 가 일단 연상은 되는데 그 뒤에 “더럽다”는 느낌
이… 식미를 불러일으킬 만큼 외형적으로도 매력적이지 않다. 식용곤충 분말을
토핑으로 만들어서 식용곤충식을 만들었다는 의미인듯 한데 앞으로 식용곤충
분말로 파스타 토핑은 금지하고 싶네요!

9. 저 눈에 빠져든다...
“완성된 음식을 보고 심각해졌다
아..또! 토핑!이라고 생각했다...”
Chef comment: 도대체 어떤 것을 더 기대할 수가 있을까? 토핑으로
과연 몇 마리를 먹을 수 있을까…우리는 지금 레드망고식 식용곤충 토핑을
보고 있습니다. 올린다고 다 끝나는게 아닙니다.

10. 누구냐 넌?
“이 만두.. 반드시 한입에 먹어야한다!”
Chef comment: 영화 “올드보이”에 나올 법한 비쥬얼, 튀김군만두라는 대
중적인 메뉴와 만두소에 넣어서 감추었다는 것엔 높은 점수를.. 그러나 누가
만두를 한입에 먹을까? 한입 베고 나서 안을 보았을 때의 그 충격과 공포!!!
반잘린 식용곤충 그리고 질질 끌려나오면서 앞이를 경계로 몸통은 입술 안쪽
에 꼬리는 밖에….

11. 김치전? 라자냐?
“안돼 틀렸어... 이건 아닐꺼야”
Chef comment: 버릴것인가? 그럴려고 만든거라고 믿고 싶은? 김치전인지
라자냐인지 알 수 없는 비쥬얼에 사이사이 깨알같은 밀웜이라니. 일부러 유충
을 키워서 먹는 치즈인 사르데냐의 까수마주(Casu Marzu or Casu fra`zigu)
도 아니고.... 어째서 이런 비주얼만을 생각했는지 그저 안타까운 생각이네요.

12. 그저 단순한 화합물... 가벼운 건 물에 뜨겠죠?^^
“음료인데 목이 메여오는 느낌은 왜 인건지..”
Chef comment: 우유 위에 떠다니는 건 곤충가루, 마시면 당연히
목에 걸리겠죠??
음료에 함부로 가루넣지 마세요...당신의 상상과는 달리 안 섞입니
다. 마시는법? 일단 입안에 넣고 섞어 드셔야 할 듯....

13. 영화 “설국열차”의 그녀석...
“드디어 설국열차의 양갱과 같은...
그런데 모양이 영화가 더 나은 것은 기분탓인가?”
Chef comment: 메뚜긴 줄 알았나요? 이거 번데기입니다~~설국
열차에도 안나온.…그나저나 번데기랑 양갱 같이 드셔보신분?^^ 꼭
해보시길...ㅠㅠ

14. 넘치면 부족한 것보다 못 하다더니...
“넘치는 토핑에 떨어지는 식욕.... 드셔보실래요?”
Chef comment: 베짜기 개미는…아삭한게 맛있다. 누드김밥도 늘 맛있다.
그래서 김밥에 넣고 토핑으로 뿌렸다. 그랬더니..이렇게 되었다. 샌드위치를
드실 때 햄 따로, 치즈 따로, 잼 따로 드시고 “음~~이 샌드위치 맛있는데~”
하시는 분 손들어보세요~

15. 다 된 밥에 곤충 뿌리기.
“통으로 넣은 곤충 볶음밥에 어떤 기대를 한거지?”
Chef comment: 볶음밥의 모든 것은 살렸다. 센불에 볶아 베짜기
개미의 아삭아삭함은 살렸고. 밥은 계란에 코팅이 잘 되었다. 최상의
볶음밥을 만들었다. 하하
그래서 먹고 싶지 않다.

“아까 귀뚜라미 샐러드 그분이시죠?”
Chef comment: 이번에도 베짜기 개미 토핑만.....

Chef comment: 잠자린 줄 알았네…전갈이었어.
조리는 과학이다. 식자재의 물성부터 잡고 그리고 조리하기를........
잘 모르면..그냥 튀기세요. 그럼 기본은 나옵니다. 아! 전갈은 빼구요

“상상으로라도 함부로 전갈을 썼다간 으윽.....”
Chef comment: 토핑은 이제 그만........

19. 수많은 실패가 있었습니다......
어쩌면 지금 보여드리는 음식들도 당시에는 잘 만들
었다며 내심자랑스러웠던 것도 있을지 모르겠습니다.
하지만, 이러한 실험작(또는 아류작)이 있었기에 지
금의 “빠삐용의 키친”의 메뉴들이 탄생할수 있었습니
다. 또한, 더 많은 메뉴개발자분들이 더 뛰어난 메뉴를
개발하실 것을 믿기에 식용곤충식을 사랑하고 아껴주
시는 많은 분들과 웃으며 세상에 나오지 못했던, 아니
나오면 안되었던 실험작들을 기억하고자 합니다.
수십번.. 수백번의 메뉴개발 실패를 반복하며 완성도
100%가 아니면 과감하게 폐기하였던 제품들이였습
니다. 그러나 이러한 실험작이 있었기에 가능했던 지금
의 “제품개발 성공기!“ 그리고 세계 최고 수준의 식용
곤충 메뉴개발 전문 연구팀이 존재할 수 있었습니다.

“재미도 없고 감동도 없는...........”
Chef comment: 여기 위에만 두둥~! 올라간거지? 겨우 네개야?
이게 식용곤충 초코바? 에너지바? 설마?^^

“뜨거워도 한입에 넣어야하는 시리즈?!....”
Chef comment: 발상도 좋았고 실제로 처음 시식 때는 나쁘지 않았다
고 생각합니다. 그러나 어느 순간 곤충을 잘 못 시식할 때는 두 번 다시
먹을 수 없는 음식이 되었습니다. 눅눅해진 곤충은 맛은 생각보다 더 나
쁜 기억이 되는 걸 깨닫게 되었네요.

22. 단팥 같은 거 아닙니다!
“도대체 정신이 멍해지는 비주얼...”
Chef comment: 부식재료도 잘 썼고~ 깨도 잘 뿌렸고 모양도 살아
있는데. 베어먹었을 때의 그 충격과 공포. 그리고 눅눅함… 참 답이
생각나지 않을 정도의 음식이 되어 버렸다.

“음식은 맛만큼이나 중요한 것이 모양과 색인데...”
Chef comment: 이거 핫 케이크 아닙니다. 이래뵈도 와플이지만... 이러지
좀 말았으면하는 소망이네요. 비쥬얼 테러리스트!! 잘 만들어진 와플에 왜
굳이 식용곤충을 사용했다는 이유 하나만으로 겉에 꼭 보여야만 했는가. 꼭
보여야 맛입니까?

24. 내가 들어 갈꺼야!
“충격과 공포! 잘만든 김밥에 메뚜기는 왜...”
Chef comment: 아우 깜짝이야. 인간이 배우는 이유는 반복적인 같은 실수
를 하지 않기 위해서입니다. 2012, 2014, 2015년 대회 때도 전시회에도 늘
나오는..단골메뉴, 그리고 상도 늘 거머쥐는..... 그러나 우리는 더 효율적이고
재치있게 상상력을 발휘할 필요가 있다.

“정체 불명....”
Chef comment: 너네 붙은거냐~들어간거냐~? 돈까스에 콩고기
를 사용함으로써 단백질을 보충했다는 건 새로웠으나…어째서 다
시 토핑에서 식용곤충 덩어리들이 등장하였는가. 그렇게 보여주시
고 싶은가요?

에필로그...
이번 “식용곤충 모르고 만들면 이렇게 된다” 서적에 실린 실험작 메뉴들은 우리 KEIL&빠삐용의 키친 임직원들에게는 특별
한 의미가 있습니다. 수십 번이 넘는 메뉴개발 동안 때론 서로 언쟁과 반목도 있었고, 울고 웃으며 동거동락 하였습니다. 하루에
도 수십번 맛을 보기위해 음식을 먹어 구토를 한 적도 있고 개발이 너무 고되어 차가운 시멘트 바닥에 신문지 한 장을 깔고 잠
을 잔적도 있습니다. 빠삐용의 키친 쿠키 한 개를 개발하기 위한 과정의 일부를 말씀드린 것입니다. 생색을 내려는 것이 아니라
이렇게 0.1%의 미완성조차 100% 완성품으로 만들었을 때 소비자는 비로서 제품을 구매합니다. 이것이 재품 개발자가 소비
자에게 약속해야 하는 것이고 지켜야 하는 것입니다. 식품을 개발하는데 있어 대강은 없습니다. 단순히 연구를 위한 연구, 보여
주기 위한 메뉴개발, 유명세를 얻기 위한 목적이라면 차라리 저희 KEIL에게 말씀해주시기 바랍니다. 저희가 해드리겠습니다.
빠삐용의 키친이 판매하는 식용곤충식 메뉴가 어찌 나왔는지 궁금해하신 분들이 많기에, 우리 역시 쉽고 평탄한 과정을 지나온
것이 아니기에 민망할수 있는 우리의 “실패작! 실험작!”을 모두와 공유하며 더 나은 식용곤충 산업화에 힘을 보태고자 합니다.
2014년 첫 식용곤충식 전문 조리책 “빠삐용이 몰랐던 식용곤충식”을 출판하고 어느새 1년의 시간이 흘렀습니다. 짧다면 짧
았던 2015년 365일간 한국 식용곤충 식품 산업은 빠른 성장을 보이며 선진국이 주도하는 식용곤충 시장의 아성에 도전하고 있
습니다. 올해 빠삐용의 키친 브랜드를 개점하며 모든 임직원 분들께 이야기 하였습니다.
“12월 31일까지 우리 스스로 평가할 때 스스로 산업에서 생존할 수 없다고 판단되면 그만합시다! 사업이라는 것은 패기와 열
정만 가지고 할수 있는것도 아니요, 제품만 좋고 마케팅에 돈만 쓴다고 성공하는 것은 더더욱 아닙니다. 난 여러분의 젊음과 청
춘과 미래를 어깨에 짊어지고 나갈 결심으로 식용곤충식을 시작했습니다. 그렇기에 사업성이 없다고 판단되면 하루라도 빨리
포기하는것이 맞습니다. 자기 식구들 하나 건사 못하는 가장이 무슨 새로운 식품을 연구하고 기아의 고리를 끊고 세상을 바꾸
나요? 안되면 여러분 모두 다른 좋은 회사에 제가 머리를 끊어 팔아서라도 취업 시키고 저 역시 다른 길을 찾겠습니다.”
그리고 에필로그를 쓰는 지금 2015년 12월 8일 전 12월31일 전직원 송년회 자리를 알아보고 있습니다.^^ 국내외 굴지의 기업들
이 기꺼이 협력사가 되어 주셨고 제품 개발과 출시를 준비 중에 있습니다. 첫술에 배부를 생각은 없습니다. 그러나 식품의 가장
기본기이자 성공의 요인인 “기술력, 제품력” 만큼은 전세계 어느 국가, 어느 기업보다 뛰어나다고 자부합니다. 그 자부심을 현
실에서 증명하는 2016년을 만들고자 합니다.
