2. Elevation Pitch:
Apple Clusters are cubes of freeze-dried apple glazed in natural
syrups such as honey and maple, coated in hazel nuts and a layer of
powdered freeze-dried apple.
Apple Clusters are to be consumed as a healthy snack. Each individual
packet will consist of 5 clusters. Packets of blended Apple Clusters
will also be available to use on a range of breakfasts bases for
example porridge or granola.
3. Initial Marketing Rationale:
The initial marketing rational behind Apple Clusters was due to two
main food trends of 2019 (snacking and elevated convenience).
Apple Clusters were designed for accessibility, convenience, to grab
and go and to be added to granola and/or porridge-based breakfasts.
Apple clusters are mainly aimed at adults and teenagers as a healthy
‘grab and go’ snack but can also conveniently be added to breakfasts.
4. Competitors:
Whitworths Shots
Whitworth Shots offer many similarities to Apple Clusters
with their packaging, flavours, customers and overall being a
healthy snack.
Instinct Bites
Instinct Bites are also very similar to Apple Clusters as they
offer a freeze-dried apple health snack. As well as this their
packaging is also similar.
6. Problem Solving/Difficulties:
The main difficulty when producing Apple Clusters was the stickiness
and chewiness of the cluster.
Week on week this issue has been faced and improvements were
trialled to eliminate the problem.
I have trialled multiple syrups (using honey, maple and both together),
less syrup, how the syrup is combined (pouring the syrup into the
mould first, premixing the syrup with the apple and nut before it into
the mould) and finally the temperature of the syrup (heating to 240f).
The final product in many testers’ eyes may still be too sticky or
chewy however many successes have been gained throughout the
trials from flavours to development on appearance and uniformity.
