What is Emulsion ? An emulsion is a mixture of two or more immiscible liquids, where one phase is dispersed as insoluble droplets into the other liquid continuous phase. An emulsion can be formed when an emulsifying agent such as a surfactant or a stabilizer joins a hydrophobic phase such as oil and a hydrophilic phase as water. How emulsion formed ?
