Slaughter house – Abbatoirs (equipped with slaughtering
equipment,medical facilities, cold rooms enclosures of keeping
animals, the procedure should be followed as per International
Laws.)

ੂੰ ਕਤਲ ਤੋਂ ਪਹਿਲ ਾਂ ਅਤੇ ਕਤਲੇਆਮ ਦੇ ਕਦਮ
ਬੁੱਚੜਖਾਨਾ - ਬੁੱਚੜਖਾਨੇ (ਕਸਾਈ ਦੇ ਸਾਜ਼ੋ-
ਸਾਮਾਨ ਨਾਲ ਲੈਸ, ਡਾਕਟਰੀ ਸਹੂਲਤਾਾਂ,
ਜਾਨਵਰਾਾਂ ਨੂੂੰ ਰੁੱਖਣ ਲਈ ਕ਼ੋਲਡ ਰੂਮ ਦੀਵਾਰ,
ਪ੍ਰਕਕਕਰਆ ਅੂੰਤਰਰਾਸ਼ਟਰੀ ਕਾਨੂੂੰ ਨਾਾਂ ਅਨਸਾਰ
ਕੀਤੀ ਜਾਣੀ ਚਾਹੀਦੀ ਹੈ।)

3. i. Inspection - It is made sure that the animal is not
suffering from any kind of disease or Infection.
Slaughter house are located in the peripherry (out-
skirt) of the city.They are made sure if the animal is fit.
i. ਕਨਰੀਖਣ- ਇਹ ਯਕੀਨੀ ਬਣਾਇਆ
ਜਾਾਂਦਾ ਹੈ ਕਕ ਜਾਨਵਰ ਕਕਸੇ ਕਕਸਮ ਦੀ
ਕਬਮਾਰੀ ਜਾਾਂ ਸੂੰਕਰਮਣ ਤੋਂ ਪ੍ੀੜਤ ਨਹੀਾਂਹੈ।
ਬੁੱਚੜਖਾਨੇ ਸ਼ਕਹਰ ਦੇ ਘੇਰੇ (ਬਾਹਰ-
ਸਕਰਟ) ਕਵੁੱਚ ਸਕਿਤ ਹਨ। ਉਨ੍ਾਾਂ ਨੂੂੰ ਇਹ
ਯਕੀਨੀ ਬਣਾਇਆ ਜਾਾਂਦਾ ਹੈ ਕਕ ਕੀ
ਜਾਨਵਰ ਕ ੁੱਟ ਹੈ।

4. ii. Resting - It is made to rest,fed and given plenty of
food and water to drink.This reduces the anxiety
(stress) levels which will help in reducing the rigor
mortis period.
ii. ਆਰਾਮ ਕਰਨਾ - ਇਹ ਆਰਾਮ
ਕਰਨ,ਬਹਤ ਸਾਰਾ ਭ਼ੋਜਨ ਖਆਉਣ ਅਤੇ
ਪ੍ੀਣ ਲਈ ਪ੍ਾਣੀ ਦੇਣ ਲਈ ਬਣਾਇਆ
ਜਾਾਂਦਾ ਹੈ। ਇਹ ਕਚੂੰਤਾ (ਤਣਾਅ) ਦੇ ਪ੍ੁੱਧਰ ਨੂੂੰ
ਘਟਾਉਾਂਦਾ ਹੈ ਜ਼ੋ ਕਠ਼ੋਰ ਮ਼ੋਰਕਟਸ ਪ੍ੀਰੀਅਡ
ਨੂੂੰ ਘਟਾਉਣ ਕਵੁੱਚ ਮਦਦ ਕਰੇਗਾ।

5. iii. Fasting - Animal is allowed to fast for about 12-14 hours. This
will clean up the bowels or intestine i.e. means minimum
bacterial activity will be there.Also stored glycogen gets converted
into lactic acid which reduces the pH of the
meat/body and will help in preserving the body for a longer
time.
iii. ਵਰਤ - ਜਾਨਵਰਾਾਂ ਨੂੂੰ ਲਗਭਗ 12-14 ਘੂੰਟੇ ਵਰਤ
ਰੁੱਖਣ ਦੀ ਆਕਗਆ ਹੈ। ਇਹ ਅੂੰਤੜੀਆਾਂ ਜਾਾਂ ਆਾਂਦਰਾਾਂ
ਨੂੂੰ ਸਾਫ਼ ਕਰੇਗਾ ਭਾਵ ਘੁੱਟ਼ੋ-ਘੁੱਟ ਬੈਕਟੀਰੀਆ ਦੀ
ਗਤੀਕਵਧੀ ਉੁੱਿੇ ਹ਼ੋਵੇਗੀ। ਇਸ ਤੋਂ ਇਲਾਵਾ ਸਟ਼ੋਰ
ਕੀਤਾ ਗਲਾਈਕ਼ੋਜਨ ਲੈਕਕਟਕ ਐਕਸਡ ਕਵੁੱਚ ਬਦਲ
ਜਾਾਂਦਾ ਹੈ ਜ਼ੋ ਕਕ ਪ੍ੀ.ਐਚ.
ਮੀਟ/ਸਰੀਰ ਅਤੇ ਲੂੰਬੇ ਸਮੇਂ ਲਈ ਸਰੀਰ ਨੂੂੰ
ਸਰੁੱਕਖਅਤ ਰੁੱਖਣ ਕਵੁੱਚ ਮਦਦ ਕਰੇਗਾ

6. iv. Washing - The animal is taken into enclosure/
room where lukewarm water is sprayed on the
animal. This will wash away the superficial dirt and
also makes the animal feel comfortable.
iv. ਧ਼ੋਣਾ - ਪ੍ਸ਼ੂ ਨੂੂੰ ਐਨਕਲ਼ੋਜਰ/ਰੂਮ ਕਵੁੱਚ
ਕਲਜਾਇਆ ਜਾਾਂਦਾ ਹੈ ਕਜੁੱਿੇ ਪ੍ਸ਼ੂ ਉੁੱਤੇ ਕ਼ੋਸੇ
ਪ੍ਾਣੀ ਦਾ ਕਿੜਕਾਅ ਕੀਤਾ ਜਾਾਂਦਾ ਹੈ। ਇਹ
ਸਤਹੀ ਗੂੰਦਗੀ ਨੂੂੰ ਧ਼ੋ ਦੇਵੇਗਾ ਅਤੇ ਜਾਨਵਰ
ਨੂੂੰ ਵੀ ਆਰਾਮਦਾਇਕ ਮਕਹਸੂਸ ਕਰੇਗਾ.

7. v. Stunning - Following outdated methods of stunning are-
a) Hammer
b) CO2 chamber
c) Cartridge/ bolt (rubber bullet)
d) Electric shock (60V-70V unconscious for 20 minutes .)
v. ਸ਼ਾਨਦਾਰ - ਸ਼ਾਨਦਾਰ ਬਣਾਉਣ ਦੇ ਪ੍ਰਾਣੇ ਤਰੀਕਕਆ
ਦਾ ਅਨਸਰਣ ਕਰ ਰਹੇ ਹਨ-
a) ਹਿੌੜਾ
b) CO2 ਚੈਂਬਰ
c) ਕਾਰਤੂਸ/ਬ਼ੋਲਟ (ਰਬੜ ਦੀ ਗ਼ੋਲੀ)
d) ਕਬਜਲੀ ਦਾ ਝਟਕਾ (20 ਕਮੂੰਟ ਲਈ 60V-70V ਬੇਹ਼ੋਸ਼।

8. vi. Sticking -
Halal- Muslims
Jhatka- Sikh
Kosher- Jews
Jugular and carotid are cut off and blood gushes; the animal
dies.The blood is collected and disposed off.
vi. ਖ਼ਤਮ ਕਰਨਾ -
ਹਲਾਲ- ਮਸਲਮਾਨ
ਝਟਕਾ- ਕਸੁੱਖ
ਕ਼ੋਸ਼ਰ- ਯਹੂਦੀ
ਜੁੱਗੂਲਰ ਅਤੇ ਕੈਰ਼ੋਕਟਡ ਕੁੱਟੇ ਜਾਾਂਦੇ ਹਨ ਅਤੇ
ਖੂਨ ਵਗਦਾ ਹੈ; ਜਾਨਵਰ ਮਰ ਜਾਾਂਦਾ ਹੈ।
ਖੂਨ ਇਕੁੱਠਾ ਕਰਕੇ ਕਨਪ੍ਟਾਇਆ ਜਾਾਂਦਾ
ਹੈ।

9. vii. Flaying - Removal of skin
Air is blown between flesh and the skin with a high
presssure and it comes out.
vii. ਲੇਇੂੰਗ - ਚਮੜੀ ਨੂੂੰ ਹਟਾਉਣਾ
ਮਾਸ ਅਤੇ ਚਮੜੀ ਦੇ ਕਵਚਕਾਰ ਹਵਾ ਉੁੱਚ
ਦਬਾਅ ਨਾਲ ਉੁੱਡ ਜਾਾਂਦੀ ਹੈ ਅਤੇ ਇਹ
ਬਾਹਰ ਆਉਾਂਦੀ ਹੈ।

10. viii. Ageing - The meat is hung on the hooks for the
rigor mortis period.
viii. ਬਢਾਪ੍ਾ - ਕਠ਼ੋਰ ਮ਼ੋਰਕਟਸ
ਪ੍ੀਰੀਅਡ ਲਈ ਮੀਟ ਨੂੂੰ ਹੁੱਕਾਾਂ 'ਤੇ
ਲਟਕਾਇਆ ਜਾਾਂਦਾ ਹੈ।
