Mexico declared independence from Spain on September 16th led by Miguel Hidalgo. Tacos and chilaquiles are popular Mexican dishes, with tacos usually containing meat, salsa, and guacamole. Menudo is a traditional soup made with beef stomach. The Jarabe Tapatio is Mexico's national dance representing courtship. Day of the Dead is celebrated in Mexico and worldwide in early
