Mental health has been in the news quite a bit lately. Dozens of U.S. states are currently suing Meta for contributing to the youth mental health crisis by inserting addictive features into their products, while the U.S. Surgeon General is touring the nation to bring awareness to the growing epidemic of loneliness and isolation. The country has endured periods of low national morale, such as in the 1970s when high inflation and the energy crisis worsened public sentiment following the Vietnam War. The current mood, however, feels different. Gallup recently reported that national mental health is at an all-time low, with few bright spots to lift spirits.
To better understand how Americans are feeling and their attitudes towards mental health in general, ThinkNow conducted a nationally representative quantitative survey of 1,500 respondents and found some interesting differences among ethnic, age and gender groups.
Technology
For example, 52% agree that technology and social media have a negative impact on mental health, but when broken out by race, 61% of Whites felt technology had a negative effect, and only 48% of Hispanics thought it did.
While technology has helped us keep in touch with friends and family in faraway places, it appears to have degraded our ability to connect in person. Staying connected online is a double-edged sword since the same news feed that brings us pictures of the grandkids and fluffy kittens also feeds us news about the wars in Israel and Ukraine, the dysfunction in Washington, the latest mass shooting and the climate crisis.
Hispanics may have a built-in defense against the isolation technology breeds, owing to their large, multigenerational households, strong social support systems, and tendency to use social media to stay connected with relatives abroad.
Age and Gender
When asked how individuals rate their mental health, men rate it higher than women by 11 percentage points, and Baby Boomers rank it highest at 83%, saying it’s good or excellent vs. 57% of Gen Z saying the same.
Gen Z spends the most amount of time on social media, so the notion that social media negatively affects mental health appears to be correlated. Unfortunately, Gen Z is also the generation that’s least comfortable discussing mental health concerns with healthcare professionals. Only 40% of them state they’re comfortable discussing their issues with a professional compared to 60% of Millennials and 65% of Boomers.
Race Affects Attitudes
As seen in previous research conducted by ThinkNow, Asian Americans lag other groups when it comes to awareness of mental health issues. Twenty-four percent of Asian Americans believe that having a mental health issue is a sign of weakness compared to the 16% average for all groups. Asians are also considerably less likely to be aware of mental health services in their communities (42% vs. 55%) and most likely to seek out information on social media (51% vs. 35%).

3. CAFÈ El cafè és la llavor de diverses espècies del gènere Coffea. La planta produeix un fruit que té la polpa fina i dolça dintre de la que hi ha dos llavors que són els grans de cafè. N’hi ha de 40 a 70 espècies però cultivades econòmicament rentables 2 o 3. Coffeaarabiga presenta un 75% de la producció mundial. N’hi ha unes 80 varietats diferents. C.a. var typica, C.a. var bourbon, C.a. var maragogips, C.a. var mocca... actualment més plantades a Amèrica. Coffea robusta, l’altre 25% restant de la producció mundial, també presneta diverses varietats. C.r. var robusta, C.r. var canephora, C.r. var uganda, C.r. var quillon,... actualment plantades a Africa. Coffealiberica, poc produïda per la seva baixa qualitat. La substància estimulant per excel·lència del cafè, és la cafeïna (1-CH3). També és diürètica. Principals productors: Brasil, Colòmbia, Indonèsia, Mèxic, Costa d’Ivori, Guatemala, Vietnam, Etiòpia, Costa Rica, Uganda, El Salvador, Equador, India...
4. Obtenció: (1) Recollidadels fruits, el moment depèn de la maduració del fruit, a l’hemisferi nord (12 – 2), al sud ( 5 – 8). Un cop recollit el fruit els grans de cafè s’han de separar de la resta dels components. Per fer-ho hi ha dos mètodes: Mètode Humit. Mètode sec.
8. Mètode humit: Es deixa macerar el fruit en aigua durant unes 72 hores; després se separa la polpa i es neteja amb màquines deixant els grans completament nets. El mètode humit és més car i modern, habitual en C.arabica (Amèrica central, Guatemala, Colòmbia, Àfrica). (2a) Macerar el fruit amb aigua fins a 72h (llavor + tegument + endocarp + polpa). La polpa es descompon per l’acció dels enzims pectolítics del propis cafè. (3a) Extracció de la polpa fent passar el macerat per tamisos. (4a) Assecaral sol. (5a) Fer passar el que queda per una maquina esquelladora per eliminar endocarp i tegument.
10. Mètode sec: Els fruits s’assequen al sol i s’esclofollen deixant els grans igualment nets Mètode sec exclusiu del Brasil. (2b) El fruit es deixar assecar al sol, en terrasses de dessecació, fins que les llavors es desprenen de la closca. (3b) Es fa passar el que queda per una maquina que eliminales restes de polpa, endocarp i tegument. (4b) Rentar.
12. Ambdós: 7. (6a, o 5b): Ja s’han obtingut grans nets i esquellats. 8. Classificació, envasat i enviament.
13. Tipus de Cafè Cafè verd o cru: gra sense cap altre tractament que el haver retirat els teguments exteriors. Cafè torrat natural: cafè verd al qual s’aplica calor perquè el gra adquireixi color, aroma i qualitat. Cafè torrat torrefacte: s’aplica calor perquè el gra adquireixi color i aroma i abans d’acabar-lo se li afegeix sucre. Cafè mescla: s’obté de la barreja de torrats naturals i torrefactes. 50% natural i 50% torrefacte 70% torrat natural i 30% torrefacte Cafè descafeïnat: cafè cru, torrat natural o torrefacte, al que se li ha eliminat la major part de cafeïna fins a un màxim residual del 0,1%, existeixen diferents sistemes per fer-ho, per exemple amb dissolvents. Infusió de cafè: és la beguda obtinguda per immersió del gra de cafè, cafè torrat i molt actualment, en aigua calenta o per acció del vapor condensat. Cafè instantani o Extracte soluble de cafè: producte en pols o granulat, soluble en aigua que resulta d’una evaporació total o parcial d’una infusió de cafè (entre un 2,5 i un 4% de cafè). Si es produeix a partir d’un cafè descafeïnat caldrà fer-ho constar com a un producte diferent. Extracte de cafè: infusió seguida de dessecació per atomització per obtenir un pols higroscòpic que cal envasar en recipients hermètics.
16. Modificacions del cafè durant la torrefacció. El cafè pateix canvis: Estructurals: la formació de bombolles de vapor d’aigua que s’alliberen al escalfar el gra, el fan més lleuger i porós, cosa que facilita el contacte amb l’aigua i el gra en la preparació posterior del cafè. Químics: s’alliberen i es formen compostos que intervenen en l’aroma, sabor, color final. Cafeïna, sabor amargant. Àcid cafeïc i el seu derivat l’àcid clorogènic, sabor àcid, amargant i característic. Altres àcids orgànics (cítric, màlic, tartàric) donen acidesa. Trigobelina, metilbetaïna que es transforma en àcid nicotínic, sabor característic i amargor. Òxids de carboni, estructura característica. Compostos volàtils (centenars, àcid acètic, aldehids, cetones (diacetil, furfural, piridina, guayacol, furans...)).
17. Alteracions durant l’emmagatzematge. El cafè pateix un envelliment. Mentre els constituents del cafè verd són bastant estables (es pot emmagatzemar durant 1-3 anys), els del cafè torrat, a causa de les modificacions físiques i químiques conseqüència del torrat, es desestabilitzen, sobretot el que intervenen en l’aroma (8-10 setmanes). Si, a més, el gra està mòlt, el temps d’emmagatzematge es limita encara més. L’envelliment consisteix en: Una pèrdua de CO2 Oxidació de molts dels seus components, especialment el Guayacol... Canvis en compostos volàtils no saturats En general, les accions anteriors fan que es modifiqui l’aroma, el sabor i que les substàncies siguin menys solubles. El cafè preparat amb grans vells és insípid i perd aroma, per evitar-ho l’emmagatzematge s’ha de fer al buit (màxim 6 – 8 mesos), en un lloc fresc (per sota de 18ºC) i sec.
18. Succedanis del cafè: Amb característiques organolèptiques similars al cafè, però sense cafeïna. La Xicoira és l’arrel de la planta Cichoriumintybus. Neta, trossejada, Torrada, Molta i tamisada... s’obté una pols fina marró que percolació amb aigua calenta dona lloc a una beguda similar al cafè. Cereals torrats (ordi i blat majoritàriament) Malta torrada, ordi germinat, torrat, molturat... Ordi torrat, gra torrat amb un 10% de sucre, glucosa o melasses... Barreges de cereals torrats...
19. Determinacions analítiques: A banda de les generals (humitat, cendres, fibra bruta, nitrogen i greix), les especifiques, cafeïna i sucres.
21. Te El producte comercial s’obté de les fulles i gemmes tendres de Cameliatheifera, Cameliasinensis(Xina)de fulla més gran; i de Cameliaassamica(India), de fulla més petita. El principal estimulant del te és la cafeïna, a part de la teobromina (1-H) i la teofil·lina, que varien en quantitat depenent de l’origen i el tipus de te. També conte tanins i substàncies polifenòliques que li donen color i sabor (astringència). El te es recull durant 8 – 9 mesos l’any o bé al llarg de tot l’any cada 6 -9 dies. Quan més joves són les fulles, el te resultant és de millor qualitat.

24. Obtenció del Te: Recol·lecció de les fulles. Dessecació en càmeres per circulació d’aire: extracció del 75-55% d’aigua. Premsat: suposa l’alliberació de sucs i enzims. Oxidació: també s’anomena Fermentació. Els enzims provoquen l’oxidació dels diferents components agafant el color del te vermell (coure): 20-28ºC durant 45’-4h, apilen les fulles en cop 5-7,5 cm d’espessor. Aturar l’oxidació amb rajos d’aire calent i sec. Torrat: 87-93ºC, 20’-22’ escalfar i dessecar per fixar l’aroma I rebaixar el percentatge d’aigua fins un 3%, agafa color negre. 26. Te Verd. Es cullen les fulles i s’assequen sense permetre la fermentació (al sol tradicionalment, en assecadors d’aire calent en processos més industrials; escalfament i/o vaporització). Conté poca cafeïna (també anomenada teïna) entre 8 i 16 mg/tassa. Conté flavonols (Miricetina, Quercitina i Kaempferol i els seus glucòsids) i catequines. Com a substancies aromàtiques entre desenes, conté, alcohol bencíl·lic, alcohol feniletíl·lic, hexenol, linalool, geraniol i metil-salicil·lat.

30. Te blanc. Es produeix com el te verd però les fulles de te que es cullen són de l’interior del brot de manera que no han vist el sol i no han produït clorofil·la (o molt poca encara). A més són de varietats que tenen pels blanquinosos i s’han de collir en unes poques setmanes determinades de primavera. Antigament era un te destinat únicament a l’emperador.

36. Te blau o te Oolong. Després de la recollida s’inicia la fermentació de les fulles però s’atura abans de les 2h. Te propietats i característiques entre el te verd i el te negre. Molt popular a Taiwan. Cafeïna de 10 a 55 mg/tassa.

38. Te negre. Després de la recol·lecció hi ha un humitejat, i una fermentació de 3 a 5h i posteriorment una oxidació. De sabor fort i amb més quantitat de cafeïna que els anteriors, de 25 a 100mg/tassa. Conté també teaflavines, ataronjades, produïdes per oxidació dels flavonols i tearrubines. Com a substàncies aromàtiques en te a centenars.

En general fet amb te negre, s’afegeixen altres fruites i vegetals a la mescla, rosa, litxí, lotus, flors i/o pell de taronja, llimona, canyella, hibisc, pinya, coco, préssec... 58. Molturació Es fa per mitjà de discs metàl·lics abrasius. El fregament augmenta la temperatura. La mantega de cacau fon entre 32 i 35ºC, per tant la massa es torna liquida (pastosa). En aquest punt hem obtingut la pasta de cacau.
60. Derivats del cacau: Pasta de cacau: Cacau torrat, esquellat, molturat per procediments mecànics. Ha de contenir un mínim del 50% de mantega de cacau Mantega de cacau Greix que s’obté dels grans de cacau, o d’altres productes semi desgreixats procedents de es llavors de cacau. Característiques:Es una massa solida que fon a 29ºC, de color blanc o groc i amb aroma/sabor a cacau, intens. 65. La xocolata És un derivat del cacau. El principal derivat de la xocolata és la xocolata amb llet, elaborat mitjançant l’addició de llet sencera o desnatada a la barreja inicial. A més s’hi poden incorporar altres derivats làctics com sèrum o caseïnes. Si a més se li afegeixen fècules o farines de blat, arròs o blat de moro s’obté la xocolata a la tassa que és una mescla preparada per consumir després d’una cocció. La xocolata blanca s’obté per una mescla inicial de mantega de cacau, sucre, llet i llet en pols o derivats làctics.

Xocolata a la tassa, amb fècules o farines Xocolata blanca, Mantega de cacau + sucre + llet o derivats làctics. Xocolata amb fruit secs (Gianduja)/amb cereals/ amb fruites.... Xocolates farcides (Bombons), xocolates anteriors farcides de pastes de fruites, fruites escarxades, licors... Cobertura de xocolata, Pasta de cacau + sucre +/- mantega de cacau. Si volem que sigui amargant, no se afegeix sucre.

74. Guaranà Llavors d’un arbust (liana) amazònic, Paulliniacupana. Conté cafeïna, així com teobromina i teofil·lina. Dels fruits secs sense tegument ni aril i torrats, s’obtenen unes pólvores que es poden rehidratar per a obtenir una beguda estimulant. Sovint es barreja amb gasoses o amb gasoses i extractes de cola.

Microbiologia dels estimulants: El fruit contenia microorganismes, la torrefacció i la fermentació faran que disminueixi la càrrega microbiana, o bé per calor o per competència El producte final, amb baixa Aw, te poc risc de creixement microbià excepte en el cas que s’emmagatzemi en condicions d’humitat. En aquests casos creixeran bàsicament espores fúngiques. Veure els casos d’altres productes secs. El problema és que les xocolates especialment les que porten altres substàncies afegides són un bon substrat pel creixement de microorganismes.
