Regular Bacon
INGREDIENTS:
1 Kilo pork belly
Curing INGREDIENTS:
3 tbsp. Coarse salt
3 tbsp Sugar
1 tsp Saltpeter
PROCEDURE:
Combine ingredients for curing mixture thoroughly. Rub mixture all over the pork. Roll up the
pork and insert in a plastic bag. Place in a dishpan and refrigerate for at least five days or a
week. Wash very well in tap water. Smoke bacon until light brown
