This document provides an itinerary for the Bailliage National de Singapour Grand Chapitre event taking place from August 23-26, 2023 in Singapore. The itinerary includes highlights for each day: Day 1 includes a duck tour and city tour followed by dinner with views of Singapore; Day 2 includes a visit to the new Mandai Bird Paradise and evening dinner cruise; Day 3 includes a cable car ride to Sentosa and visit to the S.E.A. Aquarium followed by an induction ceremony and gala dinner; Day 4 includes a closing lunch. Various meals, activities, locations, dates, dress codes and transportation details are provided for each day.

tour, followed by a special lunch featuring the famous
‘Singapore Chicken Rice’. The first day concludes with

On the second day, we will visit the newly constructed
Mandai Bird Paradise, home to rare and threatened bird
species. Explore the expansive aviaries that represent
different biomes of the world and witness captivating
avian presentations at the Sky Amphitheatre. Lunch is

Your Singapore experience is further enhanced by
an evening on the Royal Albatross, a unique yacht
equipped with impressive features and recognized for

On the third day, enjoy a cable car ride to Resort World
and visit the S.E.A. Aquarium, one of the world’s largest
and most impressive aquariums. Lunch is planned by
Singapore’s only Pair de Chaîne Otto Weibel, the co-
owner of Osia Steak & Seafood Grill.
The induction of new members and the Gala Dinner
will be held on the third evening at PARKROYAL
COLLECTION, Marina Bay. Accentuating this Grand
Chapitre dinner is our Caviar feast, with 1.5kg of caviar
per table.

On behalf of the Council of the Bailliage of Singapore, it is with great pleasure that
we welcome you to our Grand Chapitre from 23rd
to 26th
August 2023.
We look forward to extending the warmth of our hospitality to match the sun-kissed
beauty of our tropical island. As you step foot onto our city state, you will find
yourself embraced by a harmonious blend of cultures, a testament to Singapore’s
multicultural heritage.
The programme anticipates an experience for both visiting and local palates, first
timers as well as frequent visitors. Some highlights to whet your appetites include:
• The dinner on 23rd
August will feature “live” cooking stations with a panoramic view
of the skyline from one of the tallest hotels in Asia;
• Singapore’s newest multisensory attraction, Mandai Bird Paradise which features
8 walks through aviaries that reflect habitats from across the world;
• The evening dinner cruise on 24th
August aboard the Royal Albatross yacht will visit
our Southern coastline;
• S.E.A. Aquarium @ Resorts World Sentosa, a magical marine world with more than
100,000 underwater animals, grouped according to 10 different zones with over
50 habitats;
• The Gala Dinner on 25th
August will culminate in a culinary presentation featuring
1.5kg of caviar per table among other gastronomic delights.

member of the Conseil Magistral and Bailli Délégué of
Australia, to preside at our Induction Ceremony.

Visit the stunning architecture
and beautiful gold-domed, the
Sultan Mosque (left). As you
stroll along the narrow street,
you will find fascinating street
art and graffiti by both local and
international artists. After the
tour, transfer back to PARKROYAL
COLLECTION, Marina Bay.

The venue, “Dinner with a View’ is situated on the 70th floor
of Singapore’s acclaimed Swissôtel The Stamford. As
Singapore’s Leading Business Hotel and one of Southeast

Rice Restaurant is one of the established Chicken rice restaurants in Singapore,

fragrant chicken rice.

6. Newly opened Mandai Bird Paradise is one of Asia’s largest
birds parks. At 17-hectare, home to 3,500 birds from 400
species, of which 24 per cent of species are threatened.
Designed to encourage discovery at every turn. Walk-through
eight large aviaries and immerse yourself with different
biomes of the world from dense African rainforests, South
American wetlands, Southeast Asian paddy fields to Australian
dry eucalypt forests and more to discover.
Gather at the Sky Amphitheatre to watch the “Predators on
Wings” Show. After the show, continue with your discovery
to Winged Sanctuary – over 100 species of birds and their
exhibits from Brahminy Staling and Santa Cruz Ground Dove,
to Maleo and Philippine Falconet. Penguin Cove – a cold
salt-water habitat designed for penguins. Crimson Wetlands
– a strikingly colorful display of Scarlet Ibises and Roseate
Spoonbills gliding over marshy wetlands set against the

10. After a short break, continue your cable car ride to Sentosa, an
island located off the southern coast of Singapore. Formerly
used as a British military base and later as a Japanese prisoner-
of-war camp, it is now home to popular resorts, theme parks
and attractions. Today, we will visit S.E.A Aquarium, one of the
world’s largest aquariums and a unique marine habitat that are
highly entertaining for all ages. Home to more than 100,000
marine animals representing 1,000 species across more than
40 diverse habitats.
The vast array of aquatic life is complemented by up-close
animal encounters and immersive learning journeys to inspire
visitors to protect the world’s oceans. The Live Coral Habitat
is no doubt the most animated section. Spot a group of blue
tangs and other lively fishes and the multi-colored corals
are hard to miss. Walk through tunnels while bull sharks and
giant manta rays swim alongside you and over your head. The
S.E.A Aquarium will take you to an unforgettable underwater
experience.
After lunch, transfer back to PARKROYAL COLLECTION,
Marina Bay.

Established in 1956, Palm Beach is one of the oldest seafood restaurant in
Singapore and is perennially ranked among the city’s Most Popular list. It has
garnered various awards including Outstanding Service, Chef of the Year,
Top 10 Best Dish from Singapore Tourism Board, Singapore Tatler and other
noteworthy food blogs. Located at One Fullerton, home to the iconic Merlion
and where the Singapore River meets Marina Bay. The restaurant offers air-
conditioned indoor dining as well as al fresco seating where you can enjoy the
breeze and panoramic views of the city skyline.
Fullerton Bay is one of the most popular sites for visitors and locals. The
Fullerton Heritage, comprises several historic buildings in the area, including
The Fullerton Bay Singapore. The hotel’s location has a significant historical
background. The original Clifford Pier, built in 1933, was a landing point for
immigrants and a hub of maritime activity. It served as a vital link between
Singapore and the rest of the world. The pier played a crucial role in
Singapore’s growth and development as a trading port.
In 2007, the pier underwent extensive restoration and was transformed into
The Fullerton Bay Hotel Singapore. The architects and designers successfully
blended the historic pier’s architecture with contemporary elements to create
a stunning waterfront hotel.

14. Weather
Singapore is known for its hot and humid
weather, with little variation throughout the
year. The average daytime temperature is
31ºC (88ºF), dropping to around 24ºC (75ºF)
in the evenings. There will be heavier rainfall
during the monsoon season in November so
be prepared with an umbrella or rain gear.
Local Currency
The currency used in Singapore is the
Singapore dollar (S$). Money changing
services can be found not only at the
Singapore Changi Airport but also at most
shopping centres and hotels around the
island. Automated teller machines (ATMs)
are conveniently located around the island.
Major credit cards such as Visa, MasterCard
and American Express are widely accepted.
Digital and mobile payment are also
accepted in most hotels, shopping centres
and shops.
