This course is designed to enhance the
knowledge, skills and attitude in bread and
pastry production to prepare and present
desserts; prepare and display petits four in
accordance with industry standards. It covers
the basic, common and core competencies.

clean the blades with water and wipe
them dry before storing them to avoid

or sweet pies in. Generally, all are oven safe,
though they may be used for pies that are
no- bake as well.
Cookie
sheets
A Cookie Sheet is a flat sheet of metal
designed for baking, usually cookies (aka
biscuits.) It can also be used for baking
many other things from wiener wraps to
braided breads, oven fries to cinnamon rolls.
Cookie Sheets are usually made of
aluminum or steel.

a casserole is a large pot suitable for the hob or oven. With a
wide base and medium walls, a casserole can be used for
braising, frying, making soups, curries or tomato sauce.
Casseroles are usually made of copper, or copper with a thin
layer of stainless steel.
A frying pan, fry pan, or skillet is a flat- bottomed pan
used for frying, searing, and browning foods. It is typically 20
to 30 cm (8 to 12 in) in diameter with relatively low sides that
flare outwards, a long handle, and no lid. Larger pans may
have a small grab handle opposite the main handle.
A saucepan is a deep stovetop pan with a long handle and,
usually, a lid. You might use a saucepan to cook sauce, or for
the macaroni from your box of macaroni and cheese.
Saucepans are made out of various materials, from stainless
steel and aluminum to copper and enamel-coated metal.

A process of cooking by dry indirect heat usually in an oven or
related equipment. To cook food, covered or uncovered, using the
direct heat of an oven. The term is usually used to describe the cooking
of cakes, other desserts, casseroles, and breads.
