It found thiaminase activity levels up to 157 units per gram in certain fish, with some freshwater fish and shellfish posing the highest risk of causing thiaminase-induced vitamin B1 deficiency. Consuming as little as 1 gram of these high-risk foods could result in vitamin B1 deficiency within 24 hours.
