the single day’s supply of oil in the Holy
Temple in Jerusalem that miraculously lasted
for eight days, which is the basis of the Jewish

What use?

near-homophones of each other, they are quite
dissimilar.
• The name of the dish on the left is applied to any
main-dish stew in French cuisine which is cooked for
long periods of time over low heat, and which may or
may not contain meat.
• The name of the dish on the right, however is used in
Italian cuisine for a variety of meat- and tomato-based
sauces, such as Bolognese, Napoletana and Barrese,
which are usually served with pasta.

• What vegetarian snack, made by lightly boiling
the main ingredients (without removing their
natural casing) in salted and sometimes spiced
water, arguably first became popular as a

countries as a substitute for the much costlier X in
recipes of Spanish origin, especially while making the
dish Y (whose other ingredients such as meat, seafood

• Six Foods, a fledgling Boston snack company, makes
chips and cookies based on X flour, with X being a
specific member of a category of foods touted as the
wonder food of the future.
• Their baked chips (that look like regular dark tortilla
chips) are called "Chirps" and combine rice and bean
flours with flour made by slow roasting milled X. "Our
Chirps, in comparison to potato chips, have 3x the
protein, are gluten free, all natural and have half the
fat," says Six Foods' website. Identify X, itself the
subject of a KQA quiz.

• When returning British Army soldiers introduced their
sweeter, chunkier, fruit-based versions of chutney (such as
Wildon Grange, Major Grey’s and Bengal Club) to England,
they were an instant hit with the general public.
• Manufacturers, keen to satisfy demand but aware that the
word ‘chutney’ was still associated with the working classes
(to which most ordinary soldiers belonged), used the
phrase ‘_____ed vegetables’ instead, in reference to the
flavouring ingredient common to most British-style
chutneys (which was sometimes used as the main
ingredient, which leads one to assume that _____ed _____
must have been available back then). Fill in the blanks.

• This family of dishes that are claimed by many nations
as cultural treasures (namely - ceviche in Peru, Chile
and Ecuador, fish and chips in Britain, tempura in
Japan, escabeche in Spain, aspic in France) were
prefigured by the ancient Ishtar worshippers of
Babylon and invented by Zoroastrian Persians around
1500 years ago.
• It was said to be King Khosrau's favourite dish (in The
Shahnamah) and was made of sweet-and-sour stewed
beef. The name probably originated from the middle
Persian words for "vinegar" and "broth" or "food".
What family of dishes?

• Whoopie pies, as seen in the next slide, are a
popular American dessert item that can be
considered a cookie, a pie or a cake. It consists
of two round pieces of chocolate cake
sandwiched with a layer of cream or frosting.
• They are also known in some parts of America
as BFOs, a nickname which incorporates a
brand introduced in 1912. What does BFO
stand for?

• Clue 1: Its Hindi name probably came from the name of the
old capital of Java. Its Kannada name is a likely corruption
of the Hindi name. In Karnataka we have a variety of greens
with the same name, but both are not related.(+10/-5)
• Clue 2: Its Tamil name (which is also one of its Malayalam
names) probably came from the Dutch, and was later
transmitted to French and maybe to English too. (+7/-3)
• Clue 3. What fruit of Southeast Asian origin, from which
grapefruit has hardly any taxonomic difference according to
"Citrus Classification" by RC Woodford? (+4)

• Pomelo (Chakota, Chakotra, Pamplemousse or
Bamblimas is also acceptable). Also
”Grapefruit” can be accepted for Clues 1 and
2.

• An underrated relation of squid and octopus
and similar to those in taste, it is commonly
found in Sri Lanka, Tamil Nadu and Kerala,
often eaten deep-fried. Dhallo Black curry is a
classic dish made in Sri Lanka using this
creature. What animal, also known as an ink
fish?

• In the early 16th century, religious plays were the most
common form of popular entertainment in France.
Sensing boredom in lower-class audiences, however,
the playwrights of the day would insert short comic
interludes (often of a broad, physical nature) into their
plays, which proved to be very popular.
• These comic interludes were given a name meaning
“sausage stuffing” in French, since they were
metaphorically forced or stuffed into the texts of these
religious plays. This name stuck, and not long
afterwards entered the English language.
• What word?

• France and Spain had their tropical colonies, so they
could import them legitimately. Hence they favoured a
heavy tariff against the import of this food item in the
nascent European Union, but West Germany bitterly
fought the tariff and won; it was an important victory
as this food had become a fetish in the 50s and 60s in
the country.
• A popular bumper sticker of the time had two of these
forming a D in hopes of a united Deutschland. What
food item, made iconic a few decades later by photos
of ecstatic children holding them?

• The next slide shows a Christmas album by
English singer-songwriter Nick Lowe. The album
shares is named after a brand of chocolates now
owned by Nestle, popular as Christmas gifts, first
produced by Mackintosh's in 1936 and named in
turn after a play by J. M. Barrie.
• In addition, Lowe and the others featured on the
album cover are dressed in distinctly-coloured
clothes, mimicking the visual aspect of the
chocolate brand. Name it.

• In the early 20th century, a Russian scientist named Ilya
Mechnikov at the Pasteur Institute in Paris isolated
something, that later became the basis for industrially
producing a food product.
• Using this knowledge Isaac Carasso of Barcelona started a
company in 1919; he opened a factory in New York in 1942,
bringing the product to the masses in the US, where it was
previously known only among immigrant communities who
made it at home.
• By the time Carasso died in 2009 at the age of 103, he'd
played a major role in making this product a global
phenomenon. What product? What was Carasso's company
called?

• Ben Cohen, co founder of Ben & Jerry’s Ice Cream, insisted
on incorporating a wide variety of large chunks of mix-ins
such as chocolate chips, toffee, fruit pieces, almond brittle,
etc. into the ice cream when the first Ben & Jerry’s was
started in Burlington, VT in 1978. This resulted in the
widely-imitated “chunky” style of ice cream that is now
common to most Ben & Jerry’s varieties.
• The reason for this, apart from giving Ben & Jerry’s a USP,
was to compensate for an affliction that Cohen suffered
from birth, one that affects roughly one in seventeen
Americans to various degrees. What affliction, and how did
large chunks of mix-ins in his ice cream help Cohen?

• Cohen suffered from anosmia (i.e. the loss of
his sense of smell), which meant that he could
perceive the 5 basic tastes, i.e. sweet, salty,
sour, bitter, umami, but no further flavours.
• Without a sense of smell, the only way he
could improve his eating experience was by
varying the texture of the food he ate, and so
large and diverse pieces of mix-ins helped
with that in a big way.

• The following picture shows two heads of
state signing a free trade agreement in 2003.
Thanks to the efforts of Illinois Congressman
Phil Crane, who was acting on behalf of a
lobbyist representing the interests of a Illinois-
based company that was acquired four years
later by Mars Inc., what came to a (partial)
end as a direct result of this agreement?

• The chewing gum ban in Singapore. Since
2003, only chewing gum of therapeutic value
is allowed into Singapore. Gum can be bought
from a doctor, but it must be prescribed.
