Round 1: Differential Scoring
โ€ข 5 questions, answer in writing, no part points.
โ€ข Points available per question: 10+(number of
teams who didnโ€™t get it right).
โ€ข Negative: -5 per wrong answer.
โ€ข Theoretical maximum points available: 85.
โ€ข In his 1965 autobiography, published just a few months
after his death, this controversial American activist wrote:
โ€ข โ€œI first got high in Charlestown Prison on ______. My
cellmate bought from kitchen worker inmates penny
matchboxes full of stolen ______ powder. Stirred into a
glass of cold water, a penny matchbox full of ______ had
the kick of three or four reefers.โ€
โ€ข The legend of the hallucinogenic properties of ______ (a
common household spice often used in seasonal recipes
such as eggnog and mulled wine) thus grew, and the
beverage created by mixing it with water was named after
the author of the previous paragraph. Name him, and fill in
the blanks.
Blank
โ€ข A mixture of nutmeg and water is known as
Malcolm X Tea.
โ€ข In 1123, the poet Ibn Sara of Santarem, Portugal was
inspired by it to write:
Spheroid fruit,
Pleasing to taste,
Fattened by water gushing in all the gardens,
Glossy cupped in its petiole,
Ah heart of a lamb in a vultureโ€™s claws.
โ€ข What vegetable, the only "Old World" member of the
nightshade family?
Blank
โ€ข Eggplant (Solanum melongena).
โ€ข Efforts are currently underway to make it San
Fransico's official drink. Based on the
namesake brandy โ€“ whose Peruvian
etymology points to a bird rather than a fish,
as one might assume โ€“ name the punch
invented in San Francisco (whose other
ingredients include lemon juice and pineapple
syrup) that was the city's signature drink in
the 19th century.
Blank
โ€ข Pisco.
โ€ข Scientists at the University of Agricultural
Sciences, Bangalore have applied for an Indian
patent for a meetha paan beeda they have
formulated, that when packed in self-sealing
poly covers, has a shelf life of four months (at
room temperature) as opposed to the few
hours of a normal paan beeda.
โ€ข By adding what natural substance have they
enhanced the shelf life of the paan?
Blank
โ€ข Honey.
โ€ข Canadian scientist Marcellus Gilmore Edson was the
first person to patent ___1___ ___2___, in 1884.
___1___ flour, which was a component of the original
recipe, already existed as a commodity at the time. His
cooled product had โ€œa consistency like that of ___2___
or ointmentโ€, according to his patent application.
โ€ข The invention of ___1___ ___2___ is often mistakenly
attributed to X, a prominent African-American botanist
and inventor, due to the work he did cultivating
___1___ crops and popularising ___1___ ___2___ as
an inexpensive source of protein for toothless people.
โ€ข Fill in the blanks and identify X.
Blank
โ€ข Peanut butter, the invention of which is often
mistakenly attributed to George Washington
Carver.
Blank
Round 2: Clockwise
โ€ข 16 questions passing from team 1 to team 8.
โ€ข Pounce for +10, -5.
โ€ข +10, 0 on the bounce.
โ€ข Theoretical maximum points available: 160.
โ€ข Latkes (potato pancakes), Sufganiyah (small,
round jelly doughnuts) and bimuelos (wheat-
based fritters) are all traditional foods eaten
on a certain religious holiday. What do all
these foods have in common that make them
symbolic of this particular holiday? Also, name
the holiday.
Blank
โ€ข All these foods are fried in oil, in memory of
the single dayโ€™s supply of oil in the Holy
Temple in Jerusalem that miraculously lasted
for eight days, which is the basis of the Jewish
festival of Hanukkah.
โ€ข It was in the reserve list of Catherine Braganza's dowry,
when Bombay and Tangiers went to the British. But it
became a stopping point in the journey around the
Cape of Good Hope to India, and its eponymous spirit
provided sustenance to employees of the East India
company.
โ€ข Unlike European wines, the product from the volcanic
island kept well in the journey and in India. However
after the opening of the Suez Canal and the transfer of
India to the Crown, the spirit was replaced by gin &
tonic. Identify location/ spirit.
Blank
โ€ข Madeira.
โ€ข The New Haven Restaurant Institute was founded by
Frances Roth and Katherine Angell on May 22, 1946 in New
Haven, Connecticut as a vocational training school for
returning World War II veterans. With help from Yale
University, the school purchased property in the Prospect
Hill neighbourhood.
โ€ข The first class consisted of 16 students and the faculty
included a dietician, a baker, and a chef. In 1951, the
school's name was changed to The ________ _________ __
_______.
โ€ข Name this prestigious institution with a rather ambiguous
abbreviation, that counts celebrity chefs such as Rocco
DiSpirito, Andrew Zimmern and Anthony Bourdain as
alumni.
Blank
โ€ข The Culinary Institute Of America, or CIA.
โ€ข How does the Bengali paanch phoron
significantly differ from spice mixes from other
parts of India such as goda masala, garam
masala and chai masala?
Blank
โ€ข The spices are used whole and never
powdered.
โ€ข The following four plants, all of which are at
least partially edible, have a particular non-
food usage in common, one that has long died
out but was at least partially revived in 2004.
What use?
Blank
โ€ข Wreaths of olive, laurel, wild celery and pine
leaves were given as prizes at the Panhellenic
games of ancient Greece (at the Olympic,
Pythian, Nemean and Isthmian games
respectively). Olive wreaths were given along
with medals to all podium finishers at the
2004 Athens Summer Olympics.
โ€ข Unlike other fine wine, which depends on the quality
of special wine grapes, it is possible to make decent
sparkling wine even with regular table grapes; the real
cost in making it is the laborious process by which a
second fermentation is induced inside the bottle,
without also producing off-tasting sediments.
โ€ข Labour is cheap in India, however, and this is why
sparkling wine was what the modern Indian wine
industry started with, in a small Maharashtra village
called Pimpalgaon. Even though much of it did not sell
due to legal hassles, what interesting portmanteau
name was it given?
Blank
โ€ข Pimpagne, from Pimplagaon Champagne.
Identify all and connect,
etymologically.
Blank
โ€ข Biscuits, biscotti and zwieback are all derived
from the term โ€œtwice-cookedโ€ (in French,
Italian and German, respectively).
โ€ข Paneer seems to have been introduced into
India from the Middle East, perhaps by Persian
and Afghan invaders.
โ€ข A unique Iranian nomadic cheese is called
paneer Khiki. This cheese was originally
developed by the Bakhtiari tribe which resided
in Isfahan (in summer) and Shiraz (in winter).
Khiki means โ€˜skinโ€™ in Bakhtiari. So, why was
this variety of paneer so named?
Blank
โ€ข Because it was made with the rennet in the
lining of the stomach of goats or sheep.
Written interlude
โ€ข Jeopardy style, what is the question? Points based on the number of clues you
use.
โ€ข Clue 1. It wasn't the Earl. It may have been a pushcart peddler in the Bowery in
1899, according to a 2009 book by Jeri Quinzio , titled 'Of sugar and snow....โ€˜
(+10/-5)
โ€ข Clue 2. Its predecessor was the hokey-pokey, a slice cut from a brick of ....., named
after the unusual cry of โ€œOkey-pokeyโ€ by vendors in the Whitechapel district of
London. (+7/-3)
โ€ข Clue 3. The Post-Standard of Syracuse, in July 1902, reporting that vendors there
were adopting the new treat, wrote: โ€œThe vendor removes a cover from the top of
his cart, then an inner cover, disclosing the freezer, places the thin oblong wafer in
a little tin mould made for the purpose, spreads it with loose cream, claps another
wafer on top and turns it out into the grimy little paw awaiting it.โ€ (+4)
Blank
โ€ข โ€œWho invented the ice cream sandwich?โ€
โ€ข 100-199: Colours
โ€ข 200-299: Preservatives
โ€ข 300-399 : Antioxidants and Acidity Regulators
โ€ข 400-499: Thickeners, Stabilisers and Emulsifiers
โ€ข 500-599: pH Regulators and Anti-caking Agents
โ€ข 600-699: Flavour Enhancers
โ€ข 700-799: Antibiotics
โ€ข 900-999: Miscellaneous
โ€ข 1100-1599: Additional Chemicals that do not fall into
standard classification schemes
โ€ข What is this a list of?
Blank
โ€ข The International Numbering System for Food
Additives, better known as E Numbers.
โ€ข The website of this restaurant says: โ€œTHIS IS NOT
A STILL LIFE. From the buzz of the Bar Room to
the hum of the Dining Room, The ______ is
kinetic, the menus ever-changing. Because food is
life. And life does not stand still.โ€
โ€ข Where can you find this Michelin starred
restaurant, not to mention โ€œCampbell Soup Cansโ€
and one of Van Gogh's Olive Tree series?
Blank
โ€ข The Museum of Modern Art (MoMA), New
York. The restaurant is called Modern.
โ€ข Although the two dishes seen on the next slide are
near-homophones of each other, they are quite
dissimilar.
โ€ข The name of the dish on the left is applied to any
main-dish stew in French cuisine which is cooked for
long periods of time over low heat, and which may or
may not contain meat.
โ€ข The name of the dish on the right, however is used in
Italian cuisine for a variety of meat- and tomato-based
sauces, such as Bolognese, Napoletana and Barrese,
which are usually served with pasta.
โ€ข Name either dish.
Blank
โ€ข Ragout/Ragu.
โ€ข What vegetarian snack, made by lightly boiling
the main ingredients (without removing their
natural casing) in salted and sometimes spiced
water, arguably first became popular as a
snack outside its country of origin when the
American TV serial Shogun was aired in 1980?
Blank
โ€ข Edamame, or immature soybeans.
โ€ข This simple Italian dish, consisting of pasta (usually
spaghetti), eggs, cheese, bacon and black pepper, was given
a name which literally translates to โ€œas the coalmanโ€™s wife
makes itโ€, since it was first made as a hearty meal for
immigrant Italian charcoal workers in America.
โ€ข More popular in Britain and America than in its home
country, this dish was only really popularised in Italy when
American soldiers started demanding โ€œauthenticโ€ Italian
food in the aftermath of the allied liberation of Rome in
1944.
โ€ข What dish, now a menu staple in Italian restaurants the
world over?
Blank
โ€ข Spaghetti Carbonara
โ€ข In this year's Republic Day parade, what spice
(that has a camphor-like flavour and
resembles a dead cockroach visually) was the
theme of Sikkim's float?
Blank
Black Cardamom
โ€ข As seen on the next slide, the seeds of the Bixa orellana
tree are orange-red in colour. They are used to make a
natural food colouring known as annatto.
โ€ข Among its many uses (such as giving colour to
Gloucester cheese and other dairy products), annatto
is used in Brazil, Venezuela and other Latin American
countries as a substitute for the much costlier X in
recipes of Spanish origin, especially while making the
dish Y (whose other ingredients such as meat, seafood
and rice are comparatively much cheaper). Identify X
and Y.
Blank
โ€ข Annatto is used as a saffron substitute in
paella recipes.
Blank
Round 3: List It
โ€ข Name all 10 items on a particular list.
โ€ข Answer in writing.
โ€ข +3 per correct answer, bonus of +10 if you get
all 10 right.
โ€ข Theoretical maximum points available: 40.
โ€ข In 2013, food website Epicurious published a list of โ€œThe all-
time 10 best films about foodโ€. The list was:
โ€ข 1) ___ _____ (1996)
โ€ข 2) _________ _____ (1987)
โ€ข 3) ___________ (2007)
โ€ข 4) ____ _____ ___ _________ (1992)
โ€ข 5) ________ (2000)
โ€ข 6) _______ ___ ___ _________ _______ (2005)
โ€ข 7) ___ _____ ___ _____ (1994)
โ€ข 8) _______ (1985)
โ€ข 9) _ __ ____ (2009)
โ€ข 10) ________ (2004)
โ€ข Fill in the blanks.
Blank
Answers
โ€ข 1) Big Night (1996)
โ€ข 2) Babetteโ€™s Feast (1987)
โ€ข 3) Ratatouille (2007)
โ€ข 4) Like Water for Chocolate (1992)
โ€ข 5) Chocolat (2000)
โ€ข 6) Charlie and the Chocolate Factory (2005)
โ€ข 7) Eat Drink Man Woman (1994)
โ€ข 8) Tampopo (1985)
โ€ข 9) I Am Love (2009)
โ€ข 10) Sideways (2004)
Round 4: Anticlockwise
โ€ข 16 questions passing from team 8 to team 1.
โ€ข Pounce for +10, -5.
โ€ข +10, 0 on the bounce.
โ€ข Theoretical maximum points available: 160.
โ€ข Also known as almondette or Cuddappah
almond, what edible seeds (that cost around
Rs.1200 a kilo) are collected from the forested
interiors of Central India by tribal foragers, for
whom it is a rare cash crop?
Blank
โ€ข Charoli, or chironji nuts.
โ€ข As can be seen in the image on the next slide, the Old X
Distillery and the Old Y Distillery are situated in County
Antrim, Northern Ireland and Dublin, Ireland
respectively. Hence, although both brands are popular
throughout the Irish landmass, the perception among
many non-natives (especially Irish-Americans) is that X
is โ€œProtestant whiskeyโ€ and Y is โ€œCatholic whiskeyโ€.
โ€ข This supposed rivalry has been furthered by the fact
that X is now owned by Jose Cuervo (and formerly by
Diageo), and Y is owned by Pernod Ricard.
โ€ข Name X and Y.
Blank
โ€ข X โ€“ Bushmills
โ€ข Y โ€“ Jameson
โ€ข In a game of Scrabble, this spice name can get
you a minimum of 20 points plus a bonus of
50. What is this cream-coloured root, which is
more commonly known in India by a name
that combines two distinct flavours? 10 points
for getting the Scrabble term , only 5 for the
Indian name. No Pounce on the Indian name.
Blank
Zedoary/Mango ginger.
A beverage consisting of a
1:1 mix of iced coffee and
iced milk tea (traditionally
known as โ€œyuanyuangโ€ in
Hong Kong, where it is
moderately popular) has
started cropping up on
menus across North America
under the name โ€œJuan
Rodriguezโ€ (or sometimes
โ€œChi-Chi Rodriguezโ€). In
doing so, what naming
convention are these
restaurants following? Thus,
what is the real-life Juan
โ€œChi-Chiโ€ Rodriguezโ€™s
profession?
Blank
Naming blended iced tea
drinks after famous pro golfers
(a la the more popular Arnold
Palmer, a mix of iced tea and
lemonade).
โ€ข Six Foods, a fledgling Boston snack company, makes
chips and cookies based on X flour, with X being a
specific member of a category of foods touted as the
wonder food of the future.
โ€ข Their baked chips (that look like regular dark tortilla
chips) are called "Chirps" and combine rice and bean
flours with flour made by slow roasting milled X. "Our
Chirps, in comparison to potato chips, have 3x the
protein, are gluten free, all natural and have half the
fat," says Six Foods' website. Identify X, itself the
subject of a KQA quiz.
Blank
Crickets
โ€ข When returning British Army soldiers introduced their
sweeter, chunkier, fruit-based versions of chutney (such as
Wildon Grange, Major Greyโ€™s and Bengal Club) to England,
they were an instant hit with the general public.
โ€ข Manufacturers, keen to satisfy demand but aware that the
word โ€˜chutneyโ€™ was still associated with the working classes
(to which most ordinary soldiers belonged), used the
phrase โ€˜_____ed vegetablesโ€™ instead, in reference to the
flavouring ingredient common to most British-style
chutneys (which was sometimes used as the main
ingredient, which leads one to assume that _____ed _____
must have been available back then). Fill in the blanks.
Blank
โ€ข Mangoed vegetables
โ€ข This family of dishes that are claimed by many nations
as cultural treasures (namely - ceviche in Peru, Chile
and Ecuador, fish and chips in Britain, tempura in
Japan, escabeche in Spain, aspic in France) were
prefigured by the ancient Ishtar worshippers of
Babylon and invented by Zoroastrian Persians around
1500 years ago.
โ€ข It was said to be King Khosrau's favourite dish (in The
Shahnamah) and was made of sweet-and-sour stewed
beef. The name probably originated from the middle
Persian words for "vinegar" and "broth" or "food".
What family of dishes?
Blank
โ€ข Sikbaj.
โ€ข Whoopie pies, as seen in the next slide, are a
popular American dessert item that can be
considered a cookie, a pie or a cake. It consists
of two round pieces of chocolate cake
sandwiched with a layer of cream or frosting.
โ€ข They are also known in some parts of America
as BFOs, a nickname which incorporates a
brand introduced in 1912. What does BFO
stand for?
Blank
โ€ข Big Fat Oreos.
Written interlude
โ€ข Points based on the number of clues you use.
โ€ข Clue 1: Its Hindi name probably came from the name of the
old capital of Java. Its Kannada name is a likely corruption
of the Hindi name. In Karnataka we have a variety of greens
with the same name, but both are not related.(+10/-5)
โ€ข Clue 2: Its Tamil name (which is also one of its Malayalam
names) probably came from the Dutch, and was later
transmitted to French and maybe to English too. (+7/-3)
โ€ข Clue 3. What fruit of Southeast Asian origin, from which
grapefruit has hardly any taxonomic difference according to
"Citrus Classification" by RC Woodford? (+4)
Blank
โ€ข Pomelo (Chakota, Chakotra, Pamplemousse or
Bamblimas is also acceptable). Also
โ€Grapefruitโ€ can be accepted for Clues 1 and
2.
โ€ข An underrated relation of squid and octopus
and similar to those in taste, it is commonly
found in Sri Lanka, Tamil Nadu and Kerala,
often eaten deep-fried. Dhallo Black curry is a
classic dish made in Sri Lanka using this
creature. What animal, also known as an ink
fish?
Blank
โ€ข Cuttlefish.
โ€ข In the early 16th century, religious plays were the most
common form of popular entertainment in France.
Sensing boredom in lower-class audiences, however,
the playwrights of the day would insert short comic
interludes (often of a broad, physical nature) into their
plays, which proved to be very popular.
โ€ข These comic interludes were given a name meaning
โ€œsausage stuffingโ€ in French, since they were
metaphorically forced or stuffed into the texts of these
religious plays. This name stuck, and not long
afterwards entered the English language.
โ€ข What word?
Blank
โ€ข Farce.
โ€ข France and Spain had their tropical colonies, so they
could import them legitimately. Hence they favoured a
heavy tariff against the import of this food item in the
nascent European Union, but West Germany bitterly
fought the tariff and won; it was an important victory
as this food had become a fetish in the 50s and 60s in
the country.
โ€ข A popular bumper sticker of the time had two of these
forming a D in hopes of a united Deutschland. What
food item, made iconic a few decades later by photos
of ecstatic children holding them?
Blank
Bananas
โ€ข The next slide shows a Christmas album by
English singer-songwriter Nick Lowe. The album
shares is named after a brand of chocolates now
owned by Nestle, popular as Christmas gifts, first
produced by Mackintosh's in 1936 and named in
turn after a play by J. M. Barrie.
โ€ข In addition, Lowe and the others featured on the
album cover are dressed in distinctly-coloured
clothes, mimicking the visual aspect of the
chocolate brand. Name it.
Blank
Quality Street
โ€ข In the early 20th century, a Russian scientist named Ilya
Mechnikov at the Pasteur Institute in Paris isolated
something, that later became the basis for industrially
producing a food product.
โ€ข Using this knowledge Isaac Carasso of Barcelona started a
company in 1919; he opened a factory in New York in 1942,
bringing the product to the masses in the US, where it was
previously known only among immigrant communities who
made it at home.
โ€ข By the time Carasso died in 2009 at the age of 103, he'd
played a major role in making this product a global
phenomenon. What product? What was Carasso's company
called?
Blank
โ€ข Danone Yoghurt.
โ€ข Ben Cohen, co founder of Ben & Jerryโ€™s Ice Cream, insisted
on incorporating a wide variety of large chunks of mix-ins
such as chocolate chips, toffee, fruit pieces, almond brittle,
etc. into the ice cream when the first Ben & Jerryโ€™s was
started in Burlington, VT in 1978. This resulted in the
widely-imitated โ€œchunkyโ€ style of ice cream that is now
common to most Ben & Jerryโ€™s varieties.
โ€ข The reason for this, apart from giving Ben & Jerryโ€™s a USP,
was to compensate for an affliction that Cohen suffered
from birth, one that affects roughly one in seventeen
Americans to various degrees. What affliction, and how did
large chunks of mix-ins in his ice cream help Cohen?
Blank
โ€ข Cohen suffered from anosmia (i.e. the loss of
his sense of smell), which meant that he could
perceive the 5 basic tastes, i.e. sweet, salty,
sour, bitter, umami, but no further flavours.
โ€ข Without a sense of smell, the only way he
could improve his eating experience was by
varying the texture of the food he ate, and so
large and diverse pieces of mix-ins helped
with that in a big way.
โ€ข The following picture shows two heads of
state signing a free trade agreement in 2003.
Thanks to the efforts of Illinois Congressman
Phil Crane, who was acting on behalf of a
lobbyist representing the interests of a Illinois-
based company that was acquired four years
later by Mars Inc., what came to a (partial)
end as a direct result of this agreement?
Blank
โ€ข The chewing gum ban in Singapore. Since
2003, only chewing gum of therapeutic value
is allowed into Singapore. Gum can be bought
from a doctor, but it must be prescribed.
The end.
โ€ข Thank you!
