recipe home after travels in India. The article does not say how the
recipe found its way to Messrs Lea and Perrins.
When the recipe was first mixed at the pharmacy of John Wheeley Lea
and William Henry Perrins, the resulting product was so strong that it
was considered inedible and the barrel was abandoned in the
basement. Looking to make space in the storage area a few years later,
the chemists decided to try it again, and discovered that the sauce had
fermented and mellowed and was now palatable. In 1838 the first
bottles of "Lea & Perrins ________________ sauce" were released to
the general public

temperature were well-suited for growing Y. In consultation with Kerry

his lunch. His chief chef Kakasura Madappa completed the preparation of all
the courses for the royal meal. With space left for one more sweet dish,
Madappa began experimenting. He added gram flour (besan), ghee and sugar
to make a syrup.
▶ By the time the King finished his lunch, the dish had cooled down to become a
cake. The chef then served it hesitantly to the King. The delighted king
demanded a second helping and asked what it was. Madappa, nervously
named it 'X Y'. Y in Kannada means a sweet concoction.
▶ It was soon officially designated the royal sweet and is even today considered
the 'king' of sweets in the South.
▶ The king then asked Madappa to set up a shop outside the Amba Vilas Palace
grounds so that his subjects too could taste the Y.
▶ Thus was born Guru Sweets in X in 1957. The royal cook-Kakasura-passed
away in 1964, aged 70 and by then XY had become one of the main sweets in
the Indian palate. His descendants still operate the shop and the XY of this
shop has a unique and distinct taste.
