a high priority with this lot. El Inteligente's
mouthfeel is not one of the forward
sensory components but is sturdy
nonetheless helping to make this the
tremendously well balanced coffee that it
is. City+ is ideal.”
13. Process
• ¾ cup green coffee
• Pour beans in
• Turn on popper
• ~ 3 minutes first crack
• ~ 4 minutes light roast
• ~ 5 minutes medium roast
• ~ 5.5 minutes second crack
• ~ 6+ minutes dark roast
• Pour beans immediately onto cooling tray
14. Resting period
• CO2 needs to vent
• Let rest, loosely sealed
~ 12 hours
• Mason jars work well
