10. MAKE YOUR OWN SYRUP?
450g of sugar for every 8 oz of
juice
Blueberry syrup
300g / 10oz fresh
blueberries
60ml / 2.5 floz water
50g / 2oz sugar
1 ยฝ teaspoon grated lemon
peel
11. Combine blueberries, sugar, lemon
peel and water in a medium
stainless steel or enameled
saucepan.
Heat over low heat, stirring, until
sugar is dissolved. Bring to the boil,
then reduce heat and simmer 8
minutes.
Remove from heat and cool to
lukewarm. Strain into a clean
container, cover and refrigerate.
12. Choosing a suitable glass for your
mocktail can really enhance its
appearance. It requires some thought
and with the wonderful choice of
glassware of all sizes and shapes now
available, it can prove a little difficult.
13. DECORATING & FROSTING THE GLASS
Frosting is a technique
that allows you to coat the
rim of a glass with a sweet
and savoury flavoring. It
can be very enjoyable to
sip a drink from a frosted
glass, and to let the
different taste sensations
mingle in your mouth.
14. GARNISHES
When choosing the garnish keep both
flavor and visual appeal in mind.
Base the garnish on an ingredient in a
drink-for example you might garnish a
glass of limeade with a lime slice or try
something different and use
complementary garnish.
15. Preparing Garnishes
Be sure it is fresh.
Try to prepare the garnish, as it is
needed or only shortly in advance.
To cut slice of fruit, use a sharp
knife on a cutting board.
Peels can be left on, but remove
any seeds and other inedible parts
from the garnish. When using
tinned fruits, drain them well.
