R.T. Barrera elementary school students in Rio Grande City, Texas helped harvest over 250 pounds of vegetables from their new school garden. The fresh vegetables were used in the school cafeteria's salad bar as part of the Transforming Texas initiative to improve health and access to healthy foods in Starr County. Transforming Texas is a federally-funded program led by Texas A&M AgriLife Extension and UT Austin's School of Social Work that established community gardens, parks, walking trails, and a mobile market to increase access to healthy foods and exercise in Starr County, which has high poverty and diabetes rates.
