gustatory dysfunctions
1. FOOD QUALITY AND SENSORY EVALUATION
TOPIC-GUSTATORY DYSFUNCTIONS
NAME-VARTIKA ARORA
SEC-B
ROLLNO-31
BSC FOODTECHNOLOGY 3RD YR SUBMITTED TO โDR. VIDHU YADAV
2. ANATOMY OF GUSTATION
PAPILLAE (Tiny bumps present on
surface of tongue) that contains taste
buds inside it.
๏ง Fungiform โmostly found on the anterior(front)
part of tongue and contains only a few taste buds.
๏ง Circumvallate-found on the prostate (back)of the
tongue,contains thousands of taste buds.
๏ง Folliate-found on sides of the tongue,contains
100โs of taste buds.
๏ง Filliform-are scattered among fungiform papillae
and donot contain taste buds.
Papillae taste buds+glands taste cells
TONGUE
3. RECEPTOR CELLS
โข Taste buds contains different receptor cells, which perceive different
taste.
โข 10-50 receptor cell in a single taste bud
โข Renewed after every 9-10 days.
โข Have axon at the ends
Have proteins on their surfaces
When chemical compounds come
in contact with these it triggers a
cascade and eventually depolarizes
the cell and send message to brain
via neurons.
Have ion channels
Chemicals comes in contact
with these and allows the ion
flow inside the cell,which
causes cell to depolarize and
fire action potential.
Sweet ,bitter ,umami sour and salty
5. Gustatory dysfunctions
QUALITATIVE
DISORDERS
โข Dysgeusia-unpleasant
perception of a tastant.
โข Phantogeusia- is
apperception of taste that
occurs in absence of tastant.
QUANTITATIVE
DISORDERS
โข Ageusia- it is an absence of
taste or sense
โข Hypogeusia-it is decreased
sensitivity to all tastants.
โข Hypergeusia-it refers to
enhanced gustatory sensitivity.
6. 1. Mechanistic cause of gustatory dysfunction
2. Aging
3. Genetic reasons
4. Endocrine disorders
5. Olfactory disfunctions
6. Drug induced
7. Zinc deficiancy
disorder description examples
Transport problem Stimulus cannot reach the
receptor
