Many elements of the Mediterranean eating pattern associate with

industry and public health organizations (i.e. USDA, NIH, etc.)
should realign agricultural and food production with public health
programs so more people can transition to healthier eating.
Major economic incentives to produce and market foods to
protect the health of the US public should be developed not only
because of increased risk of chronic diseases, but also in response
to ballooning medical costs…”

Diet is a key contributor to disparities in many chronic diseases and conditions. Racial and ethnic minority populations in
the U.S. have high incidence, prevalence, and mortality and poor survival from diet-related chronic diseases... Differences
in dietary intake and dietary behavior are a key contributor to these disease-related disparities. The elimination of health,
diet and other health behavior-related disparities is a major healthcare priority in the U.S.
… groups that experience these (diet) disparities also tend to have higher incidence of morbidity and mortality rates and
poorer survival for many diet-related chronic diseases and conditions, including cardiovascular disease, hypertension,
cancer, Type II diabetes, and obesity. For example, African Americans develop hypertension at an earlier age, tend to have
more severe high blood pressure, and are less likely to receive treatment. With few exceptions, cancer incidence and
mortality rates are highest for African Americans compared to whites and other minority groups. Type II diabetes is
epidemic among Native Americans. Obesity, as well as other cardiovascular disease risk factors such as metabolic
syndrome and diabetes are prevalent in Hispanics. Clearly, diet-related disparities are a major contributor to differences,
i.e., adverse health outcomes in racial/ethnic minorities compared to whites.

June 18, 2020 - New data confirms the stark racial health disparities for COVID-19
health outcomes. When adjusted for age, black patients are dying at a rate
3.6 times that of their white peers, according the Brookings Institution. For Hispanic
patients, that number comes in at 2.5 times the death toll of white patients.
The COVID-19 pandemic has shone a glaring light on racial health disparities that
have plagued the US health system for decades. Most experts agree this is not
because people of color are predisposed to contract COVID-19; the virus is an equal
opportunity illness that does not know race or ethnicity. Instead, years of structural
inequity in the healthcare system have made it more likely a black patient will
develop a chronic illness. And while COVID-19 may not know race, it does affect
those with comorbidities more than generally healthy patients.

“It is well established that CVD disproportionately affects non‐Hispanic (NH) blacks and
individuals of low socio-economic status... Significant innovations to the SNAP program to
encourage healthier diets are needed now, but modifications typically are incremental or
modest and, consequently, limit public health gains that could be realized.
Modifications to SNAP to incentivize purchasing of healthy foods could increase SNAP
recipient's healthy food purchasing power, and disincentivize or restrict the use of SNAP
dollars for unhealthy food purchases with a resultant benefit on diet quality, as well as CVD.”

disincentives for sweetened beverages, junk food,
processed meats…
