1. Parker House Rolls
- Makes 2 dozen
1 envelope dry yeast
¼ cup warm water
3 tablespoons plus a pinch of sugar
¾ cup plus 1 tablespoon butter – melted and cooled
1 cup milk – room temperature
1 tablespoon salt
3 large eggs
4 ½ to 5 cups of flour
Pre heat oven to 350 F – Bake for 40 minutes or until golden brown
Whisk yeast, warm water and a pinch of sugar – let stand until foamy, about 6 minutes with mixer on
low (with dough attachment). Add butter, milk, salt, sugar, and eggs. Add 4 ½ cups of flour, if dough is
sticky add more.
Place dough in a buttered bowl, cover with buttered plastic wrap and let rise in a warm place until
doubled in size – about 2 ½ hours.
Butter baking pan. Roll dough out about 12 x 16 inches – brush with butter, cut crosswise into 4 equal
parts – 24 strips – fold strips in half – butter again and cover in wrap – leave for 25-30 minutes then
bake.
