PRESIDENT’SMESSAGE

It’s difficult to believe that another year has come and gone, and
we are in June again.
I guess I must have been enjoying myself a great deal as time
just seems to fly by.
This has been a difficult year for the guild. I am very excited
to know that after a long and frustrating year that the guild will
be back on firm ground again.
After many years of being in McNabb and being able to store
out library on site, the City of Ottawa decided that this would
no longer be allowable and we were told to remove the library.
The executive has spent an inordinate amount of time and effort
trying to find a new home for either the library or the guild as a
whole. Although at first glance there seems to be many places
available, there are not very many which matched our search
parameters: reasonable cost, space for the library, and reasona-
bly central. Thanks to Claire Todd’s good work we now have
a new home – in the City View Untied Church. In addition to
allowing us to store our library, it also has lots of parking and is
truly handicapped accessible. Although McCabe has been ret-
rofitted for handicapped access, it is still a difficult building for
anyone with mobility challenges to enter. The executive will be
able to turn their time and efforts to new challenges.
A shortened executive has also run the guild; Dani unfortu-
nately resigned, and we were unable to fill her position of Vice
President. We also need a new librarian. Claire Todd has
taken on the role of Workshops chair and is already in contact
with several teachers so we should have some quite nice week-
ends coming up. Shelly Jones-Penney has taken over as Pro-
gram chair; and anyone who was privileged to see her pin dolls
and listen to her talk at the May meeting, is aware of how much
energy and passion she is bringing to the job. I think that we
are in for a wonderful year.
We have sorted a great many books out of the current library –
the bookcase was so full it was difficult to see what exactly we
did own. A lot of these are older books or are books where
we have other and better things on the same subject or tech-
nique. Any road, it cleans up the library and gives the guild
space for some of the new and exciting books being published.
Several of us went to the Books For You sale last weekend and
have bought some lovely new books for the library. These
purchases include the quite wonderful book on the Ackworth
School of Samplers, which was just recently published and is
destined to be the benchmark for these beautiful works. Also
new to us is two of the A to Z books (Beadwork and Stump-
work) which include very clear and specific photographs de-
scribing how to learn the techniques. These and others will be
available for loan in September.
Don’t forget though a new location means a new night. Start-
ing in September we will be in City View on the third Wednes-
day of each month, not Tuesday.
Hope you all have a wonderful summer and I will see you all in
the fall at our new site.

The Ottawa Valley Guild of Stitchery is a non-profit organization to encourage and promote the practice and
knowledge of the art of embroidery in all its forms. This organization provides monthly meetings, chapter news-
letters, special day and/or evening workshops, lending library within the Guild, and membership in the national
organization, the Embroiderers’ Association of Canada.
The Embroiderers’ Association of Canada, founded in 1973, is the parent organization of the Ottawa Valley
Guild of Stitchery. As a member of the OVGS one automatically becomes a member of the Embroiderers’ Asso-
ciation of Canada, which entitles the member to the Association’s book, slide and video libraries; study portfo-
lios; books on crewel, counted thread and canvas embroidery; individual and group correspondence courses in
embroidery techniques from basic to advanced levels; Embroidery Canada magazine, four issues yearly; work-
shops and seminars; and exhibitions, competitions and awards.
Newsletter Advertising and Rates: Needle Notes is published four times per year: August, December, March and
June. All advertisements are payable on submission either in cash or by cheque. Please make cheques payable to
the Ottawa Valley Guild of Stitchery. Submission deadline for the June 2007 issue is May 25, 2007.

August renewals are due. A reminder to those whose memberships are
due for renewal by 1 Aug that they should have their checks into me at
the June meeting. If you cannot attend the June meeting, please mail
your renewal form and check to me by 1 July at the latest. I need to
process and send in before leaving on summer holidays. Please remem-
ber that EAC requests that renewals are submitted two months in ad-
vance.
An updated members list will be ready for distribution to all members at
the September meeting. If you have not signed the privacy consent
form, your name will not appear on the list, or If you do not choose to
have your name added to the list, you may indicate this in the instruc-
tions on the privacy consent form.

Sit upright. Grasp the left knee. Lift left
leg off the floor. Bend forward (curling
the back), bringing the nose toward the
knee. Repeat 3 - 5 times. Repeat with
right leg.
Stand with knees slightly bent, place palms
on lower back, fingers pointing down-
ward. Gently push your palms forward
and bend your back backwards. Hold for 5 -
10 seconds. Repeat 3 - 5 times. Note: Use
this stretch after sitting for extended periods
Sit or stand upright. Interlace fingers and
lift arms overhead. Keeping the elbows
straight, press arms as far back as you
can. Slowly bend to the left side until you
feel a stretch. Hold for 5 - 10 sec-
onds. Slowly bend to the right side until
you feel a stretch. Hold for 5 - 10 sec-
onds. Repeat 3 - 5 times.
Sit or stand upright. Slowly reach your
arms overhead. Reach outward and up-
ward until you feel a stretch. Hold for 5-
10 seconds. Repeat 3-5 times. Sit or stand
upright. Slowly reach your arms over-
head. Reach outward and upward until
you feel a stretch. Hold for 5-10 seconds.
Repeat 3-5 times.
Sit with left leg across right leg. Rest el-
bow or forearm of right arm on the outside
of the left upper thigh. Gently apply pres-
sure with right elbow or forearm towards
the right. As you apply pressure, look over
your left shoulder. Hold for 5 - 10 sec-
onds. Repeat 3 - 5 times. Repeat with the
other side.
Sit with left leg across right leg. Rest
elbow or forearm of right arm on the out-
side of the left upper thigh. Gently apply
pressure with right elbow or forearm to-
wards the right. As you apply pressure,
look over your left shoulder. Hold for 5 -
10 seconds. Repeat 3 - 5 times. Repeat
with the other side.
Stand upright. Place left leg on an ele-
vated stationary surface that is at a com-
fortable height (knee height or lower is
recommended). Keep head up and lower
back arched. Slowly leaned forward until
you feel a stretch in the back of the
thigh. Hold for 5 - 10 seconds. Repeat 3
- 5 times. Repeat with the other leg.
Stand arms's length from a wall or other
support, feet facing forward. Place
right foot forward and keep the left
leg straight and the heel on the
ground. Lean your body towards the
wall until you feel a stretch in the left
calf. Hold for 5 - 10 seconds. Repeat 3
- 5 times. Repeat with the other side.
Sit slightly forward on the chair so your
back is not touching the chair's
back. Maintain your balance by holding
onto the seat pan. Place feet flat on the
floor. With leg straight, lift left foot 5 -
10 cm. off the floor. Hold for 5 - 10
seconds and return it to the floor. Re-
peat with other side.
Sit upright. Hold left foot off the floor
with left leg straight. Point toes up and
downward. Repeat 3 - 5 times. Repeat
with other side.

I am a co-chair of the Joint Health and Safety Committee at my “real job”. We’ve been preparing our ergonomics policy and I
found that much of what we were looking into could be applied not only to computer work, but to when you’re doing needle-
work. I am preparing this for you in 3 parts. Part I contained Neck and Face Exercises and Hand and Wrist Exercises (previously
offered in the December 2006 Issue), Part II contained Shoulder and Arm Exercises (previously offered in the March 2007 Is-

MILITARY KISS PILLOW PROJECT NEWS

As you can see from the heading of this article, we now
have a new name. Kate and I have been mulling over the
project name for a little while. Since it is all military per-
sonnel , “Soldier” refers more to our Army personnel but
just doesn’t fit for our Navy or Airforce personnel. We
don’t want them to feel left out. So, we decided that
“Military” just fits better.
In this issue of Needlenotes, I’m reporting to you about
our “Un-sung Heroes”. In calling them un-sung heroes,
I’m referring to all those outside our guild that generally
have no affiliation with us, but yet are giving us their time
and energy to help us with our Soldier Pillow Project.
Former-member, Sandra Baynes, has a cross-stitch circle
that have been working hard at helping us. I have been
keeping them up-to-date with things that are going on
with the project through Sandra and she’s been providing
us with finished pillows. Elaine Tessier has been doing
the same with her on-line stitching group, they’ve been
providing her with tops and Elaine has been finishing
them for us. Both groups are doing wonderful work, and
in mentioning them here, I’d like to give them some rec-
ognition and thanks.

MARIAN PARRY EDUCATION SCHOLARSHIP
• The Ottawa Valley Guild of Stitchery offers an education scholarship named in honour of the late Marian
Parry, one of the founding members of the Guild and its first president. The Marian Parry Education Schol-
arship is aimed at promoting the art of embroidery through education and is offered to all OVGS members
in good standing.
• The scholarship for 2007/2008 has an approximate value of $425 to be awarded as two grants, one grant of
$300 and another of up to $125.
• The $300 grant may be applied toward registration for an Embroiderers’ Association of Canada (EAC)
Seminar workshop.
• The grant of up to $125 may be applied towards an EAC correspondence course or an OVGS workshop.
• Scholarship grants must be used within the same membership year as awarded. Each successful applicant
will receive a cheque for the full amount of the grant upon registration for Seminar 2008, the correspon-
dence course or OVGS workshop.
• Applications must be submitted to the Scholarship Committee by the date indicated below. The successful
applicants will be determined by the Selection Committee and approved by the Executive.
• Successful applicants will be required to submit a brief evaluation report to the OVGS Executive within
one month of attending the Seminar or OVGS workshop or completing the correspondence course. They
will also be required to share their experience with other members of the Guild by giving a short presenta-
tion (this could be at “show and tell”) or writing an article for the OVGS newsletter at a time to be agreed
upon with the Guild executive.

Military Kiss Pillow Project News (Continued from Page 4).
Sherry Hickey is still around, though not a member any more. She’s
been making a few pillows for us whenever her back is in good working
order and she has time. She has even found spare maple leaf fabric to
back the pillows.
My mom (yes, my mom) has been working hard with making tops. She
calls them her therapy, she has been laid up with problems with her leg
and hip at the moment. She just loves making them, in both languages.
She calls them her “I LOVE YOU PILLOWS”. To date, she’s provided
us with I’m sure, more than 100 tops. And last time I talked with her, she
has another 5 or 6 dozen for us. I think she holds the record for most tops
made.
I have received also the odd one by mail from people who see our project and contact us and want to help out in
some small way. To them, we thank too.
We have 3 finishers. Bev, Dee and Lesley. I work with Bev and Dee and Kate works with Lesley. We’ve been
bringing our tops to Bev and Lesley and they’ve been steadily sewing
and stuffing for us and since Dee can’t sew, she’s been stuffing her
little heart out when I sew the pillows together. Lesley also has a few of
her quilting friends helping her out for us. You are all great hard
workers! Thanks ladies!
There is another helper. The company who print our newsletter have
agreed to print up the little labels that we include with our little pillows
for FREE. Lorne at Copiexpert Plus in Hull, Thank you!
Kate has a number of people putting feelers out for places to send our
pillows, taking samples and talking with many. We thank them as well.
We are hoping that sometime in August to have a get-together and
stitch and stuff pillows, so if anyone is up to it, just let us know and
we’ll keep in touch with you. All our helpers are welcome to join us. I
will let you know on the decided date!
And last of all, to many of our members who have participated and helped with this worthy cause, THANK
YOU to you too. With out all our helping members and our helpers, this project wouldn’t get off the ground.
Now that Canada Day is nearing, getting
Canadian fabric is easier. Fabricland has a
few styles as well as Wal-Mart. Kate and I
have been accumulating a small stash of
backing squares!

BASIC STITCH KIT

This is a reminder to new members in the guild who don’t know what a basic
stitch kit is. Your kit could include any or all of the following:
• Needles of various sizes and types (blunt, sharp, small, large)
• A small pair of embroidery scissors
• Pencil and/or pen
• Small embroidery hoop
• Thimble (if you use one)
• Assorted threads and flosses
• Anything else you can think of…

STITCHING GROUP RECIPES

Most of our members are also members of stitching groups. I have asked our members to share their fa-
vourite recipes for things they make when their stitching group meets. Following along with the Chocolate
Theme that I’m run into the last few issues, Kate Dinsmore came up with a yummy treat. Now I do know
there are a few of you who haven’t been able to bake our recipes for the fact that they use Flour. Well this
one’s for you! No flour what-so-ever in this recipe. She apparently got it originally of a website called
Epicurious (http://www.epicurious.com) We’ve included one of the Reviews/Tips. Kate points out that if
you follow it, it does make for more of a mess, but apparently it’s well worth it.
FLOURLESS CHOCOLATE CAKE
(Can be preapared in 45 mins. or less)
4 ounces fine-quality bittersweet chocolate (not unsweetened)
1 stick (1/2 cup) unsalted butter
3/4 cup sugar
3 large eggs
1/2 cup unsweetened cocoa powder plus additional for sprinkling
Accompaniment if desired: Coconut Lime Sorbet
Preheat oven to 375°F and butter an 8-inch round baking pan. Line bottom with a round of wax paper and
butter paper.
Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmer-
ing water melt chocolate with butter, stirring, until smooth. Remove top of double boiler or bowl from
heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over
chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven 25 min-
utes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving
plate.
Dust cake with additional cocoa powder and serve with sorbet if desired. (Cake keeps, after being cooled
completely, in an airtight container, 1 week.)
TIP for LOW CARBERS & FRENCH COOKS: A tip for everyone for a superior cake follow some
classic french cooking techniques. Melt the choc & butter as described, and have on hand 2 more bowls.
In one, put the yolks and beat with sugar/sweetner till thick. In the other, beat whites till triple in volume
(you can add cream of tartar as a stabilizer too, to prevent collapsing), and set aside. Cool choc mixture,
and SLOWLY dribble choc into yolks. (And not the other way around!) If you are hasty, you will cook
them instead and ruin the recipe. When mixed, fold in the whites in 3 equal scoops, don't worry if you
have some white patches- better this than overmixed. Bake in oven as per recipe, do not open the door.
You will have a higher, more velvety result! Low carbers: the secret to getting this to work with unsweet-
ened choc is to make sure you have the right sweetness as you go along, so taste it at every step. To get
the least "artificial" flavour, mix different sweetners. I use a bit of Splenda, and both white and brown
Sugar Twin. I also bite the bullet and add the tiniest amount of icing sugar into the melting chocolate,
maybe 1 tbsp max- you really can't totally fool Mother Nature when it comes to the chemistry of baking.
For the few extra carbs, I'd rather have a smaller slice of something delicious than a larger piece of not-as-
good cake. If you do all of the above, you'll be in heaven with this recipe! If you have any recipes you’d

  • 1. OVGS Needle Notes - June 2007 Page 1 PRESIDENT’SMESSAGE By Kate Dinsmore It’s difficult to believe that another year has come and gone, and we are in June again. I guess I must have been enjoying myself a great deal as time just seems to fly by. This has been a difficult year for the guild. I am very excited to know that after a long and frustrating year that the guild will be back on firm ground again. After many years of being in McNabb and being able to store out library on site, the City of Ottawa decided that this would no longer be allowable and we were told to remove the library. The executive has spent an inordinate amount of time and effort trying to find a new home for either the library or the guild as a whole. Although at first glance there seems to be many places available, there are not very many which matched our search parameters: reasonable cost, space for the library, and reasona- bly central. Thanks to Claire Todd’s good work we now have a new home – in the City View Untied Church. In addition to allowing us to store our library, it also has lots of parking and is truly handicapped accessible. Although McCabe has been ret- rofitted for handicapped access, it is still a difficult building for anyone with mobility challenges to enter. The executive will be able to turn their time and efforts to new challenges. A shortened executive has also run the guild; Dani unfortu- nately resigned, and we were unable to fill her position of Vice President. We also need a new librarian. Claire Todd has taken on the role of Workshops chair and is already in contact with several teachers so we should have some quite nice week- ends coming up. Shelly Jones-Penney has taken over as Pro- gram chair; and anyone who was privileged to see her pin dolls and listen to her talk at the May meeting, is aware of how much energy and passion she is bringing to the job. I think that we are in for a wonderful year. We have sorted a great many books out of the current library – the bookcase was so full it was difficult to see what exactly we did own. A lot of these are older books or are books where we have other and better things on the same subject or tech- nique. Any road, it cleans up the library and gives the guild space for some of the new and exciting books being published. Several of us went to the Books For You sale last weekend and have bought some lovely new books for the library. These purchases include the quite wonderful book on the Ackworth School of Samplers, which was just recently published and is destined to be the benchmark for these beautiful works. Also new to us is two of the A to Z books (Beadwork and Stump- work) which include very clear and specific photographs de- scribing how to learn the techniques. These and others will be available for loan in September. Don’t forget though a new location means a new night. Start- ing in September we will be in City View on the third Wednes- day of each month, not Tuesday. Hope you all have a wonderful summer and I will see you all in the fall at our new site. Page 2 OVGS Needle Notes - June 2007 The Ottawa Valley Guild of Stitchery is a non-profit organization to encourage and promote the practice and knowledge of the art of embroidery in all its forms. This organization provides monthly meetings, chapter news- letters, special day and/or evening workshops, lending library within the Guild, and membership in the national organization, the Embroiderers’ Association of Canada. The Embroiderers’ Association of Canada, founded in 1973, is the parent organization of the Ottawa Valley Guild of Stitchery. As a member of the OVGS one automatically becomes a member of the Embroiderers’ Asso- ciation of Canada, which entitles the member to the Association’s book, slide and video libraries; study portfo- lios; books on crewel, counted thread and canvas embroidery; individual and group correspondence courses in embroidery techniques from basic to advanced levels; Embroidery Canada magazine, four issues yearly; work- shops and seminars; and exhibitions, competitions and awards. Repeat with right leg. Stand with knees slightly bent, place palms on lower back, fingers pointing down- ward. Gently push your palms forward and bend your back backwards. Hold for 5 - 10 seconds. Repeat 3 - 5 times. Note: Use this stretch after sitting for extended periods Sit or stand upright. Interlace fingers and lift arms overhead. Keeping the elbows straight, press arms as far back as you can. Slowly bend to the left side until you feel a stretch. Hold for 5 - 10 sec- onds. Slowly bend to the right side until you feel a stretch. Hold for 5 - 10 sec- onds. Repeat 3 - 5 times. Sit or stand upright. Slowly reach your arms overhead. Reach outward and up- ward until you feel a stretch. Hold for 5- 10 seconds. Repeat 3-5 times. Sit or stand upright. Slowly reach your arms over- head. Reach outward and upward until you feel a stretch. Hold for 5-10 seconds. Repeat 3-5 times. Sit with left leg across right leg. Rest el- bow or forearm of right arm on the outside of the left upper thigh. Gently apply pres- sure with right elbow or forearm towards the right. As you apply pressure, look over your left shoulder. Hold for 5 - 10 sec- onds. Repeat 3 - 5 times. Repeat with the other side. Sit with left leg across right leg. Rest elbow or forearm of right arm on the out- side of the left upper thigh. Gently apply pressure with right elbow or forearm to- wards the right. As you apply pressure, look over your left shoulder. Hold for 5 - 10 seconds. Repeat 3 - 5 times. Repeat with the other side. Stand upright. Place left leg on an ele- vated stationary surface that is at a com- fortable height (knee height or lower is recommended). Keep head up and lower back arched. Slowly leaned forward until you feel a stretch in the back of the thigh. Hold for 5 - 10 seconds. Repeat 3 - 5 times. Repeat with the other leg. Stand arms's length from a wall or other support, feet facing forward. Place right foot forward and keep the left leg straight and the heel on the ground. Lean your body towards the wall until you feel a stretch in the left calf. Hold for 5 - 10 seconds. Repeat 3 - 5 times. Repeat with the other side. Sit slightly forward on the chair so your back is not touching the chair's back. Maintain your balance by holding onto the seat pan. Place feet flat on the floor. With leg straight, lift left foot 5 - 10 cm. off the floor. Hold for 5 - 10 seconds and return it to the floor. Re- peat with other side. Sit upright. Hold left foot off the floor with left leg straight. Point toes up and downward. Repeat 3 - 5 times. Repeat with other side. ERGONOMICS AND NEEDLEWORK - PART III of III By Lynne Demmery I am a co-chair of the Joint Health and Safety Committee at my “real job”. We’ve been preparing our ergonomics policy and I found that much of what we were looking into could be applied not only to computer work, but to when you’re doing needle- work. I am preparing this for you in 3 parts. Part I contained Neck and Face Exercises and Hand and Wrist Exercises (previously offered in the December 2006 Issue), Part II contained Shoulder and Arm Exercises (previously offered in the March 2007 Is- sue), and now the final installment, Part III contains Back, Legs and Ankle Exercises (this Issue of OVGS NeedleNotes). MILITARY KISS PILLOW PROJECT NEWS By Lynne Demmery with assistance from Kate Dinsmore As you can see from the heading of this article, we now have a new name. Kate and I have been mulling over the project name for a little while. Since it is all military per- sonnel , “Soldier” refers more to our Army personnel but just doesn’t fit for our Navy or Airforce personnel. We don’t want them to feel left out. So, we decided that “Military” just fits better. In this issue of Needlenotes, I’m reporting to you about our “Un-sung Heroes”. In calling them un-sung heroes, I’m referring to all those outside our guild that generally have no affiliation with us, but yet are giving us their time and energy to help us with our Soldier Pillow Project. Former-member, Sandra Baynes, has a cross-stitch circle that have been working hard at helping us. I have been keeping them up-to-date with things that are going on with the project through Sandra and she’s been providing us with finished pillows. Elaine Tessier has been doing the same with her on-line stitching group, they’ve been providing her with tops and Elaine has been finishing them for us. Both groups are doing wonderful work, and in mentioning them here, I’d like to give them some rec- ognition and thanks. (Continued on Page 7)

OVGS Needle Notes - June 2007 Page 5 MARIAN PARRY EDUCATION SCHOLARSHIP • The Ottawa Valley Guild of Stitchery offers an education scholarship named in honour of the late Marian Parry, one of the founding members of the Guild and its first president. The Marian Parry Education Schol- arship is aimed at promoting the art of embroidery through education and is offered to all OVGS members in good standing. • The scholarship for 2007/2008 has an approximate value of $425 to be awarded as two grants, one grant of $300 and another of up to $125. • The $300 grant may be applied toward registration for an Embroiderers’ Association of Canada (EAC) Seminar workshop. • The grant of up to $125 may be applied towards an EAC correspondence course or an OVGS workshop. • Scholarship grants must be used within the same membership year as awarded. Each successful applicant will receive a cheque for the full amount of the grant upon registration for Seminar 2008, the correspon- dence course or OVGS workshop. • Applications must be submitted to the Scholarship Committee by the date indicated below. The successful applicants will be determined by the Selection Committee and approved by the Executive. • Successful applicants will be required to submit a brief evaluation report to the OVGS Executive within one month of attending the Seminar or OVGS workshop or completing the correspondence course. They will also be required to share their experience with other members of the Guild by giving a short presenta- tion (this could be at “show and tell”) or writing an article for the OVGS newsletter at a time to be agreed upon with the Guild executive.   • 8. Page 8 OVGS Needle Notes - June 2007 Military Kiss Pillow Project News (Continued from Page 4). Sherry Hickey is still around, though not a member any more. She’s been making a few pillows for us whenever her back is in good working order and she has time. She has even found spare maple leaf fabric to back the pillows. My mom (yes, my mom) has been working hard with making tops. She calls them her therapy, she has been laid up with problems with her leg and hip at the moment. She just loves making them, in both languages. She calls them her “I LOVE YOU PILLOWS”. To date, she’s provided us with I’m sure, more than 100 tops. And last time I talked with her, she has another 5 or 6 dozen for us. I think she holds the record for most tops made. I have received also the odd one by mail from people who see our project and contact us and want to help out in some small way. To them, we thank too. We have 3 finishers. Bev, Dee and Lesley. I work with Bev and Dee and Kate works with Lesley. We’ve been bringing our tops to Bev and Lesley and they’ve been steadily sewing and stuffing for us and since Dee can’t sew, she’s been stuffing her little heart out when I sew the pillows together. Lesley also has a few of her quilting friends helping her out for us. You are all great hard workers! Thanks ladies! There is another helper. The company who print our newsletter have agreed to print up the little labels that we include with our little pillows for FREE. Lorne at Copiexpert Plus in Hull, Thank you! Kate has a number of people putting feelers out for places to send our pillows, taking samples and talking with many. We thank them as well. We are hoping that sometime in August to have a get-together and stitch and stuff pillows, so if anyone is up to it, just let us know and we’ll keep in touch with you. All our helpers are welcome to join us. I will let you know on the decided date! And last of all, to many of our members who have participated and helped with this worthy cause, THANK YOU to you too. With out all our helping members and our helpers, this project wouldn’t get off the ground. Now that Canada Day is nearing, getting Canadian fabric is easier. Fabricland has a few styles as well as Wal-Mart. Kate and I have been accumulating a small stash of backing squares!   • 10. Page 10 OVGS Needle Notes - June 2007 STITCHING GROUP RECIPES By Lynne Demmery Most of our members are also members of stitching groups. I have asked our members to share their fa- vourite recipes for things they make when their stitching group meets. Following along with the Chocolate Theme that I’m run into the last few issues, Kate Dinsmore came up with a yummy treat. Now I do know there are a few of you who haven’t been able to bake our recipes for the fact that they use Flour. Well this one’s for you! No flour what-so-ever in this recipe. She apparently got it originally of a website called Epicurious (http://www.epicurious.com) We’ve included one of the Reviews/Tips. Kate points out that if you follow it, it does make for more of a mess, but apparently it’s well worth it. FLOURLESS CHOCOLATE CAKE (Can be preapared in 45 mins. or less) 4 ounces fine-quality bittersweet chocolate (not unsweetened) 1 stick (1/2 cup) unsalted butter 3/4 cup sugar 3 large eggs 1/2 cup unsweetened cocoa powder plus additional for sprinkling Accompaniment if desired: Coconut Lime Sorbet Preheat oven to 375°F and butter an 8-inch round baking pan. Line bottom with a round of wax paper and butter paper. Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmer- ing water melt chocolate with butter, stirring, until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven 25 min- utes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate. Dust cake with additional cocoa powder and serve with sorbet if desired. (Cake keeps, after being cooled completely, in an airtight container, 1 week.) TIP for LOW CARBERS & FRENCH COOKS: A tip for everyone for a superior cake follow some classic french cooking techniques. Melt the choc & butter as described, and have on hand 2 more bowls. In one, put the yolks and beat with sugar/sweetner till thick. In the other, beat whites till triple in volume (you can add cream of tartar as a stabilizer too, to prevent collapsing), and set aside. Cool choc mixture, and SLOWLY dribble choc into yolks. (And not the other way around!) If you are hasty, you will cook them instead and ruin the recipe. When mixed, fold in the whites in 3 equal scoops, don't worry if you have some white patches- better this than overmixed. Bake in oven as per recipe, do not open the door. You will have a higher, more velvety result! Low carbers: the secret to getting this to work with unsweet- ened choc is to make sure you have the right sweetness as you go along, so taste it at every step. To get the least "artificial" flavour, mix different sweetners. I use a bit of Splenda, and both white and brown Sugar Twin. I also bite the bullet and add the tiniest amount of icing sugar into the melting chocolate, maybe 1 tbsp max- you really can't totally fool Mother Nature when it comes to the chemistry of baking. For the few extra carbs, I'd rather have a smaller slice of something delicious than a larger piece of not-as- good cake. If you do all of the above, you'll be in heaven with this recipe!
