3. Bijou

Bijou, meaning “jewel” in French, is said
to have been invented by Harry Johnson.
This cocktail is called Bijou because it
combines the colours of three jewels: gin
for diamond, vermouth for ruby and
chartreuse for emerald. An original-style
Bijou is made stirred with ice as Harry
Johnson’s 1900 “New and Improved
Bartender Manual” states. Then “mix well
with a spoon and serve.”

Champagne Cocktail

The first evolved cocktail on record, but
the record is silent as to who came up
with the idea of replacing the spirits in a
cocktail with Champagne. Its first
appearance was in San Francisco in
1850 and it is pleasant to imagine Jerry
Thomas laying out a round of these for
a party of black-fingered sons of toil, as
they poured the gold dust out on the bar.

Crustas were a fancy twist on the basic
cocktail created by Joseph Santini, who
opened the Jewel of the South saloon in
1852 on Gravier Street in New Orleans.
Many authorities on the history of drinks
believe it is the progenitor of the mighty
Sidecar.

George Kappeler’s “Modern American
Drink” that year, the Ford Cocktail
definitely predated Henry Ford’s rise
and that of the horseless carriage that
bore his name. It is possible the drink
was named for Malcolm Webster Ford,
famed champion athlete, journalist,
and great-grandson of Noah Webster.

The Brooklyn is one of five cocktails
named for the boroughs of New York
City, along with the Bronx, the
Manhattan, the Queens and the Staten
Island Ferry. It resembles a Manhattan,
to which it is often unfavourably
compared. It largely fell into obscurity
after the end of Prohibition, but
experienced resurgence in the 1990s.

“East India” was named not for the
eastern part of India but for all of it and
more. The English holdings were known

6. The Martinez

It is widely accepted that the Martinez
had direct influence on the creation
of the Martini. In 1887, the professor
Jerry Thomas put it into print. And it was
Thomas who is credited with creating the
sweet drink while working in California
for a patron travelling to Martinez.

Sazerac

The history of The Sazerac is so intricate.
In1850 the Sazerac Company of New
Orleans acknowledged the creation of
this drink and said it was served at the
Sazerac Coffee House in the French
Quarter. The potion combines whiskey,
absinthe and Peychaud’s bitters and it
was Peychaud himself who is credited
with serving it as early 1838.

Mulled wine dates back to Roman antiquity, but it wasn’t until the 14th century
that the mix of wine, fruit and spices gained its name, from an Old English
word meaning “muddled.” While the word “muddle” is most commonly used today
to denote a generally confused state, in its original meaning, that confused state
was brought about with alcohol. It is thought that the process of mulling wine
was first employed as a way to save wine that was about to spoil.
In medieval times these wines were called Ypocras or Hipocris, named after the
physician Hippocrates. They were thought to be very healthy, and indeed, with wine
at the time being far more sanitary than water, these heated drinks probably did
keep people healthy through the cold winters.
Moving forward to the 1500s, cookbooks listed methods of mulling “Clarrey”,
or Bordeaux. Recipes involved honey, cinnamon, cardamom, galingale and of course
French wine. Mulled wine was a favourite in Victorian England, and Negus -
a type of mulled wine - was even served to children at their birthday parties.
Today, mulled wine is a staple at many holiday parties.
Charles Dickens gets the credit for elevating mulled wine into a traditional
holiday drink. While mulled wine appeared in several of the beloved novelist’s
books, it was its appearance in his popular short story, A Christmas Carol,
that sealed its place in Christmas culinary history.
