CORN & BEAN
QUESADILLAS
2 cans WIC approved beans
4 ears corn from food pantry
4 WIC approved whole wheat tortillas
1 block WIC approved cheese
Bring large pot of water to a boil. Place ears or corn into the water and cover.
Boil for approximately 10 minutes until tender. Remove from water and let
cool. Cut corn along cob to remove from ear. Place corn, beans, and desired
vegetables into desired cooking instrument over medium heat until warm.
Spoon into tortillas. Shred cheese or cut into thin slices and add to tortilla.
Sauté for approximately 1 minute per side. Cut into triangles. Serve warm.
