3. Trans Fat Issue. What’s the real scare?
The best way to evaluate
the health benefits of an
oil are by whether the
fatty acids that make it
up are mostly long or
medium chained,
saturated or unsaturated.

4. Trans-fats are polyunsaturated fats transformed
into solid fat via Hydrogenation for various
applications
Trans Fat Issue. What’s the real scare?
Frying Fats
Dairy Substitutes
Baking Fats
Confectionery Fats
5. To turn liquid fat (e.i. Soya, canola,
corn, rapeseed, sunflower oils) to solid
To make foods stay fresh on the shelf
longer
To improve texture of the fat and
flavor stability
Trans Fat Issue. What’s the real scare?
But why Hydrogenate?
6. Transfats occur in PARTIALLY hydrogenated oils
PARTIALLY hydrogenated oils are used because fully
hydrogenated oils can be waxy and too hard
When an oil is fully hydrogenated, it no longer
contains any unsaturated fatty acids. Therefore, TFA
can not exist in fat that does not contain unsaturated
fatty acids.
The double bonds get weak due to high temperature,
catalyst and vacuum pressure and result to transfats
during processing
Trans Fat Issue. What’s the real scare?
7. Transfats have two hydrogen atoms on
opposite sides of the double bond
Cis – form Trans – form
Trans Fat Issue. What’s the real scare?
8. Why are Transfats BAD?
Transfats increase bad cholesterol, cause high
blood pressure, heart disease and cancer.
Trans-fats lowers the good cholesterol in the
blood
Transfats affect platelet function, consequently
leading to heart attacks and strokes.
Transfats diminished mental performance and
cause neural degeneration.
Trans Fat Issue. What’s the real scare?
9. Transfats leads to weak cell walls and
destroys normal cell function.
Transfats are not recognized by
enzymes and can’t be used to produce
useful mediators
Transfats cause malformation of cell
membranes and other cell structures
Trans Fat Issue. What’s the real scare?
So why are Transfats REALLY
bad?
11. Trans Fat Issue. What’s the real scare?
“We sued Kraft in May 2003 to ban the marketing
and sale of trans fat-laden Oreos to children, and
to prevent Kraft from continuing to distribute
Oreos to young kids in schools. As a result of
the lawsuit, Kraft agreed to remove partially
hydrogenated oil from the Oreo. Kraft also
agreed to stop all in-school marketing.
On April 6, 2004, Kraft made the big
announcement that we have been waiting for.
Trans fat-free Oreos have arrived!!!”

13. What can we do?
Use of RBD Coconut and Palm oil
blends to get the right functionality.
Fractionation instead of hydrogenation.
Full hydrogenation instead of Partial
hydrogenation

14. Deadliest Deadline!!!
for Trans Fatty Acid content labeling as mandated
by USFDA
but with no RECOMMENDED DAILY VALUE
Denmark: <2% TFA (March 2003)

healthy life! Good day!
