Rotisseur
April 2010 – June 2016 Philadelphia, PA
• Planned, organized, and oversaw the conception, construction, and
launch of Rotisseur, a quick service restaurant. Coordinated and
participated in every stage of construction, from design and
demolition, to finish carpentry and paint.
• Created and tested the recipes for the opening menu. Those recipes
would remain the core offerings for the life of the business, and
included our Best of Philly 2012 Banh Mi and Best of Philly 2014
Rotisserie Chicken.
• Conducted the hiring and supervised the training of both counter
staff and kitchen brigade.
• Maintained the safe and successful operation of the business for
more than 5 years, from opening day to closing day.
• Managed day to day operations of the business. Oversaw the
counter and kitchen staff, including hiring, training, scheduling,
ordering, and associated administrative tasks.
• Performed daily accounting tasks, maintained payroll, taxes,
inventory, and billing.
• Administered marketing plans and created marketing materials,
which included graphic design, the drafting of press releases and
brand maintenance.

• Initiated and oversaw the development of townhouses in Graduate
Hospital, from land acquisition through sale.
• Worked in conjunction with architects to develop an original
townhouse concept, the ‘split level loft’, which was subsequently
featured in Philly Style magazine.
• Researched and sourced all finishes and fixtures, with a focus on high
quality, low cost, environmentally friendly materials.
• Monitored and educated contractors and subcontractors as to the
level of quality expected.
• Reviewed all change order requests and made final decision.
• Orchestrated and coordinated the milestone schedule, milestone
payments, and timely completion.
• Fit, finished and installed all kitchen cabinetry, and bathroom sinks,
counters and vanities.
• Designed and welded custom steel railings and formed and finished
maple handrails.
• Designed and fabricated tables and counters, open shelving units for
kitchens, and platform beds from maple, pressed seed board,
aluminum, and steel.
• Did all groundwork, framing and decking of fences and decks.
• Designed and installed outdoor kitchen, including glass tile counter,
sink, and natural gas grill.
