  2. 2. 1° STEP: WOODEN FRAMES HARVESTING <ul><li>The beekeeper will harvest the honey at the end of August, because it is the end of the flowering season. The bees have had time to harvest all the summer. The surplus produced by honey bees is contained in wooden frames . The frames contain artificial cells, that beekeeper put in the hives in springtime. At the end of summer the beekeeper gathers these wooden frames. </li></ul>
  3. 3. 2° STEP : HONEY EXTRACTION <ul><li>In his workshop the beekeeper will remove layer of wax over top of cells . </li></ul><ul><li>Then he will extract the honey with a honey extractor (manual or electrical) . Honey extractor is a machine that spins the frames in a centrifugation movement. When stopping the extractor all the syrup will fell down the machine. </li></ul>
  4. 4. 3° STEP: SOAKER <ul><li>The honey syrup is poured into a container that is shaped like a barrel, which is called the soaker . </li></ul><ul><li>The soaker keeps the honey at a temperature of 28° for 24 hours. The impurities contained in the honey in this way go back up to the surface. </li></ul>
  5. 5. FINAL STEP: THE STORAGE <ul><li>Finally, honey is stored in glass jars and left in a room where temperature must be between 10 and 18°. </li></ul>
