Fatteh: consists of four mixed layers: Fried pita bread, Whole Grain
chickpeas ,Tahini sauce with lemon & garlic and topping of pine nuts, Paprika
and cumin.
Hummos: Chickpeas paste with lemon & Tahini.
Fool: Bean Salad, tomato, parsley, garlic, cumin and Lemon
Kishkeh: is made from a yogurt and bulgur mixture that is left to ferment. After
7-10 days, it is dried and ground to make a powder, which is used in many
different ways throughout the Middle East.
Mamonieh: is a breakfast dish and a specialty from Aleppo. It is semolina,
toasted in clarified butter on the stove till its nutty flavor is released, then
cooked for mere minutes in sweet water till creamy and porridge-like.
