Introduction
• Predictive microbiology is a description of the responses of
microorganism's to particular environmental conditions such as
temperature, pH and water activity.
• It utilises mathematical models (built with data from laboratory
testing) and computer software to graphically describe these
responses.
• It is is based on the idea that the response of microorganisms to
environmental conditionals is reproducible, and therefore if
conditions are known then the response of characterized
microorganisms is predictable.
