Parmesan cheese is a hard, granular cheese made from unpasteurized cow's milk in specific regions of Italy. The milk is mixed from the morning and evening milkings and heated while rennet is added to curdle it. The curd is cut into rice-sized pieces and heated further before being pressed and aged for a minimum of 12 months to produce a hard cheese.
