This study analyzes the nutritional and anti-nutritional properties of different Brassica oleracea varieties (green, red, and Chinese cabbage) grown in Jos, Plateau, Nigeria, using albino rats. The findings indicate that while these cabbages are rich in essential nutrients, they also contain high levels of anti-nutritional factors that can affect mineral bioavailability and alter hepatic and erythropoietic parameters. The results suggest the need for further research to mitigate the effects of these anti-nutrients while preserving the beneficial nutritional qualities.
