This document summarizes an Innovation Clinic event focused on maximizing value from waste in fruit and vegetable supply chains. The event included presentations on opportunities to create high-value extracts and organic energy from waste, as well as a business panel discussing challenges. Attendees then worked in groups to identify major opportunities and how to unlock economic potential through increased collaboration across industry stakeholders.
