The workshop tested the protein content of different types of milk using the Bradford Protein Assay. Samples of different milks were diluted and added to Coomassie blue dye, which binds to amino acids and changes color based on protein concentration. Known protein standards were also prepared. Absorbance measurements from a spectrophotometer were used to create a standard curve to calculate the exact protein concentration in mg/mL of the milk samples.
