38. Filipino Traditional Tools and Equipment
Here are some of the traditional tools used in the
preparation of certain Filipino dishes, though with the
advent of advance technology and influences of other
countries the tools used had already evolved, but still there
are those who use the traditional implements.
• Kalans are balbous clay stove, shaped to bear wood-fire in
their bellies while they hold the pots and pans over the
flames.
• Palayoks are the red earthen pots used for boiling soups
and steaming rice.

39. • Kawalis are versatile woks made from cast iron used for stir-frying, deep-
frying, braising, sautéing or making sauces. Giant metal pans are called
kauas usually used for large preparations of recipes during fiestas or
important occasions.
• Almirez is a stone or marble mortar and-pestle used for pounding spices,
garlic etc.
• Sandok a wooden handled ladle with coconut-shell scoop.
• Sianse a wooden spatula used for food-turning and searing meats.
• Gilingan is a heavy round millstone used for grinding rice.
• Chopping Knife and sangkalan. The duo is used for chopping, mincing
slicing etc.
• Kudkuran or the coconut grater
• Pastry pots and molds.
