2. Deposits accumulate in difficult to get at cracks and crevices that daily staff
cannot reach and where dismantling prior to cleaning is necessary.
DCS undertake this type of cleaning and restore all units we clean
compatible with age.
We will cleanse and sanitise using manual or chemical means as applicable.

Canopies, Extraction Systems and Ducting
DCS clean ventilation extraction systems to your agreed specification.
We degrease and decarbonise the interior and exterior of canopies. Removing coatings of
carbon and solidified cooking oils built up from cooking fumes that have spread
throughout the trunking.
Our trained teams pay particular attention to seams, rivets and anti drip gullies, removing
and cleaning the grille on extraction fans, cleaning fan blades, motor casing and housing.
We remove filters, deep cleaning the filters, filter housing and trunk interiors, to ensure
hygiene and fire risk safety standards are continually exceeded.
Equipment
We clean equipment in the locations agreed and itemised on the survey sheet to the
predefined specification.
DCS will dismantle equipment wherever agreed possible, descale, degrease and remove
carbon, limescale and other deposits from interior and exterior surfaces where
appropriate and clean the areas inaccessible to daily cleaners. We will then reassemble,
test and leave all equipment in full working order.
Any equipment showing defects or faults of any kind such as broken knobs, hinges or
defective burner elements will be brought to the attention of the client.
Structural Cleaning
DCS wash all floors, walls and ceilings consistent with surface finish and to
approved specification.
We will clean underneath units where access allows. Our highly skilled teams will clean
light fittings, wall or window mounted extraction fans and other fixtures to the surfaces
as agreed.
All deposits including grease and food debris will be removed using a suitable cleaning
agent. Water jetters and steam cleaners may be used to assist the removal of deposit build
up, particularly around the legs of units and the base of equipment.
Excess water will be removed by vacuum to ensure the floor is dry and safe, finished with
a ‘mop and polish’ if required or suitable finishing agent.
