2. Confusion
• These days there is a great deal of confusion
around eggs.
1. Free Range
2.Organic
3.Hormone Free
4.Chickenless
• What does it all mean? Anything?
3. In the beginning
• In truth, all eggs are pretty much created equal.
• Any chicken will confirm this.
4. Nature/Nurture
• It is unclear what role genetics plays and what
role the environment plays in how eggs turn out.
• All we do know for sure, and all you really need
to know about eggs, is that there are:
• Country Eggs
• And
• City Eggs
20. Whether Country or City
• All eggs enjoy a good yolk. Honest, open the
fridge right now and tell them one. See what
happens.
• All eggs hate plays on words using their names.
So, stop thinking about using eggsactly, or
eggceptional, or eggstant, or eggstra, or
orcheggstra, or, well you know which ones are in
your head right now.
• All eggs are pretty placid. But, if you work at it
you can piss one off and it will go Humpty on
you. Avoid doing that.
21. In Conclusion
• Now that you know what to look for I am sure
you will spot many additional differences that I
did not have the time to tell you about.
• Remember, you can’t tell just by looking at the
carton.
• Often times country eggs and city eggs occupy
the same egg crate. All this time you’ve been
unaware.
• Think about that over breakfast tomorrow.
