Fermented sausage is made by mixing uncooked meats, fats, salts, sugars and spices along with a starter culture of lactic acid bacteria and coagulase negative cocci. This mixture is placed in casings and fermented for 6-12 weeks. During fermentation, the starter culture produces lactic acid and bacteriocins which inhibit pathogens, prevent spoilage and provide flavor. The cocci bacteria reduce nitrates and produce color, flavor and aroma. Historically, fermented sausage allowed for meat preservation; today it is enjoyed for its taste in foods like pizza, sandwiches and on its own.
