Vocational Support Officer, (chef Instructor)- catering for prisoner’s dietary
requirements in a cook/ chill environment for numbers upwards of 700. Relief
supervisor as required; consisting of ordering, quality control and HACCP and food
star compliance.

As the Kitchen Manager / head chef my responsibilities have encompassed
such duties as:
• Catering and Logistics Management SOTG (Special Operations
Task Group) Afghanistan Jan – July 08
• Supervise the day-to-day Management, scheduling and functioning of kitchen
operations.
• Allocate duties – direct and supervise subordinates, 5 – 15 personnel in their
daily duties and responsibilities( military and civilian)
• Instruct personnel in the production of a variety of meals and/or food products.
• Work to budget constraints, and KPI targets.
• Instruct in Catering procedures, bulk cookery, and pastry work.
• Oversee and compile daily work sheets and monthly rosters.
• Administration duties.
• Order and control foodstuffs.
• Monitor wastage and the economic use and storage of food and supplies.
• Liaise with suppliers and contractors.
• Supervise, control and co-ordinate the receiving, storage and rotations of
perishable and non-perishable foodstuffs.
