Beshbarmak is the national food of Kazakhstan, traditionally made from the head of a horse or sheep. It involves burning off the skin and hair, peeling the head, removing the meat, and serving it with egg noodles and flat bread. Originally, Kazakhs would kill and serve a young horse to important guests as a delicacy in their yurts, but now use sheep heads instead as horses are more valuable.
