Spain has 17 autonomous communities and many traditional festivals and celebrations. Some of the notable festivals include La Tomatina, a tomato-throwing festival in Buñol; Las Fallas, where large paper mâché sculptures are burned in Valencia in March; and Holy Week processions. Spain also has famous fairs like the Seville Fair and the running of the bulls at the San Fermin festival in Pamplona. Spanish gastronomic traditions include crema catalana, a Catalan custard dessert; San Jose fritters eaten on March 19th; panellets, an almond-based dessert eaten for All Saints Day; and easter cakes varying by region.
