The European Gymsen project aims to prevent and slow sensory and cognitive decline in elderly individuals, particularly those with Alzheimer's disease, by stimulating sensory perception through exercises focusing on smell and taste. With over a hundred participants aged 50 to 95 from Spain, Czech Republic, Greece, and Italy, the project has shown improvements in food perception and identification capacities. The initiative, involving various educational and technological institutions, has developed tools for enhancing sensory function to address appetite disorders commonly found in the elderly.
