wine from a tank which was not punched :“quite reduced nose, then malic,
bitter, a little hollow transition, alcoholic, sharp acidity, soft tannins, smooth”.
The same wine from a tank which was punched 4 times during fermentation:
“Pale purple colour, fruity nose, red blackcurrant, peony, minty scent,
ethanal peak then well built and full, unctuous, sweetness, character,
nervous, firm, tight and well rounded tannins, some base”. Incredible
